AYAM GORENG SAMBAL UDANG KERING / DRIED SHRIMP SAMBAL FIRED CHICKEN


Here's a simple fried chicken based on sambal and dried shrimps. This is atually my favorite sambal that used to cook with tiger prawns, but this time around I tried it on chicken. Delicious and goes well with soup and hot rice. Try this, I strongly recommended this dish for your lunch or dinner menu.


INGREDIENTS
1 whole chicken cut into 16 / 1 ekor ayam potong 16
11 bird's eyes chiled cut thinly / 11 biji cili padi hiris nipis-nipis
1 onion cut into ring / 1 biji bawang besar potong bulat
4 strig curry leave / 4 tangkai daun kari
3 tbsp turmeric powder / 3 sdb serbuk kunyit
1/2 cup dried shrimps fried and grind (dried grind) / 1/2 cawan udang kering goreng dan kisar halus (kisar kering)
2 tbsp dark soya sauce / 2 sdb kicap pekat
1 tbsp sugar / 1 sdb gula
salts to taste / garam secukup rasa.

Marinade chicken with turmeric powder and salts. Deep fried chicken till cook and set aside

For The Dried Shrimp Sambal
30 dried chiles - soaked / 30 batang cili kering
11 bird's eyes chiled cut thinly / 11 biji cili padi hiris nipis-nipis
1 onion / 1biji bawang besar
5 cloves garlic / 5 ulas bawang putih
1" ginger / 1" halia

Blend all ingredients to form a paste / Blend semua bahan untuk menjadikan pes.

PREPARATIONS

  1. Heat up oil. Fry the saute bird's eyes chile for a few second, add in sambal paste, add curry leave, soya sauce, sugar and salts to taste. Fry till fragrant. Add water if necessary. Add in fried dried shrimps. Fry for a few minutes and finally add the fried chicken. Mix well. / Panaskan minyak, tumis cili padi beberapa saat dan masukkan bahan giling sehingga naik baunya. Masukkan garam, gula dan daun kari. kacau rata, masukkan udng kering yang digoreng tadi, biar sampai naik baunya baru masukkan ayamgoreng tadi. Balik-balikkan dan pastikan sambal menyaluti ayam.
  2. Before off the heat add in the sliced onion. Mix throughly. Ready to serve./ Sebelum padamkan api, masukkan bawang besar yang dipotong bulat tadi. kacau rata dan padamkan api. Sedia dihidang.

Biasanya saya menggunakan resipi ini untuk udang harimau, tetapi kali ini saya cuba menggunakan ayam goreng. Ternyata sedap dan menyelerakan. Udang kering dan daun kari membangkitkan aroma sajian ini. Cukup menyelerakan dan sesuai digandingkan dengan sup dan nasi panas.

Salam LinRosly, memang sedap, bagi yang tak suka berkuah, resipi kering macam ni memang sesuai. Tapi pastikan udang kering digoreng dahulu, kemudian kisar kering, kombinasi udang kering dan daun kari meletupkan aroma masakan ni. Cubala pasti Lin tak akan menyesal.
