Nyonya Fish Curry is different from the normal curry. I don;t know how to describe it, but it taste in between Asam Pedas and Curry, may be because of the Ginger flower and daun kesum. This is my first attempt and I quite like it. Not spicy but Hot.

  • Any fish cut into slices - I used Senangin here
  • 10 lady's finger / 10 biji bendi
  • 2 lemongrass / 2 batang serai
  • 4 strig daun kesum / 4 tangkai daun kesum
  • 1 ginger flower halved / 1 bunga kantan belah dua
  • 1 cup coconut milk / 1 cawan santan
  • 2 cups stock / 2 cawan stok
  • 1/2 cup tamarind juice / 1/2 cawan air asam jawa

Ingredient to be Pounded
  • 10 shallots / 10 biji bawang merah
  • 5 cloves garlic / 5 ulas bawang putih
  • 2 slices lengkuas / 2 hiris lengkuas
  • 5 buah keras / 5 biji buah keras
  • 15 dried chilies soaked first / 15 tangkai cili kering rendam dahulu
  • 2" turmeric root / 2" kunyit hidup
  • 1" shrimp paste / 1" belachan

Blend all into wet paste / Blend semua bahan

Add caption
  1. Clean fish and set aside.
  2. Heat up oil and fry pounded ingredients till fragrant. Add in lemongrass. Fry for 5-10 minutes/ Add in stok.  Leave to boil. Add in fish, ginger flower and daun kesum. Add salts and tamarind juice to taste. Cook until fish is almost done. Add in lady's finger and coconut milk. Slow down the heat and simmer until oil saparated. ready to serve./ Panaskan minyak dan tumis bahan giling sehingga garing dan naik baunya. Masukkan serai. Masukkan stok dan renehkan seketika sehingga mendidih. Masukkan ikan dan biarkan seketika. Masukkan bunga kantan, daun kesum dan air asam jawa dan garam secukup rasa, Renehkan sehingga ikan hampir masak baru masukkan bendi. Biarkan seketika dan masukkan santan, renehkan perlahankan api dan renehkan sehingga naik minyak. Angkat dan hidang.
