CINCALOK CHICKEN, SAMBAL CINCALOK AND CINCALOK OMELETTE

Cincalok is a paste of fermented small shrimp. It is usually served as a condiment together with chillis, shallots and lime juice. Popular among the Peranakan and synonymous with Malacca in fact it is a MUST BUY items if you visit Malacca. Not many people can accept cincalok, it's stinky and salty, but to cincalok lovers they can't leave without it. I am not a Cincalok fan but happened to try this recently. I started learning to cook cincalok when I saw the recipe from GoodFood Magazine on Easy Peranakan. The magazine featuring popular Peranakan dishes especially using cincalok prompt me to try. Lucky enough I managed to get a bottle of cincalok from the supermarket. Here are 3 popular cincalok recipes, Chicken Cincalok, Sambal Cincalok and Omelette Cincalok. Give a try you will sure love it.

CHICKEN CINCALOK
5 + 2 tbsp cooking oil / 5 + 2 sdb minyak masak
1 block firm beancurd (tau kwa) sliced into thicks strips /1 keping tahu keras, potong memanjang
2-3 cloves garlic sliced / 2-3 ulas bawang putih dihiris halus
1 onion sliced / 1 biji bawang besar dihiris halus
4 tbsp cincalok / 4 sdb cincalok
300 g boneless chicken sliced / 300 g isi ayam dihiris
1 tbsp lime juice / 1 sdb air limau
1 tsp salt / 1 sdt garam
1 tbasp sugar / 1 sdb gula
1 red chili sliced / 1 biji cili merah dihiris menyerong
1 bunch cilantro chopped / 1 genggam daun ketumbar dicincang

  1. Heat up oil in a work. Add beancurd dan deep fry till golden brown. Remove when cooked and drain excess oil on kitchen towel / Panaskan minyak dan goreng tahu hingga kekeuningan. Angkat dan toskan minyak.
  2. Pour away oil and heat remaining 2 tbsp oil . fry garlic and onion until fragrant, about 1 minute./keluarkan minyak dan tinggalkan lebihkurang 2 sdb minyak. Tumis bawang putih dan bawang besar sehingga naik baunya, lebih kurang dalam 1 minit.
  3. Add in cincalok and saute until fragrant about 2 mins. Add the chicken, lime juice, salts and sugar. Stir fry until the chicken is cooked throughly./Masukkan cincalok dan goreng sehingga naik baunya, lebih kurang 2 minit. Masukkan ayam, jus limau, garam dan gula. Kacau sehingga ayam benar-benar masak.
  4. At the last minute, stir in the sliced chili and cilantro. dish up and serve immediately./ Akhir sekali masukan cili potong dan daun ketumbar. Sedia dihidang.
SAMBAL CINCALOK



Ingredients:
  • 5 tbsp Cincalok/ 5 sdb cincalok
  • 3 shallots, peeled and sliced thinly / 3 biji bawang dihiris halus
  • 1 tbsp chillie padi (small hot chillies), chopped finely / 1 biji cili padi dihiris halus
  • 2 tbsp lime juice / 2 sdb jus limau
  • 1 tbsp sugar / 1 sdb gula
  1. Combine all ingredients and mix well / Campurkan semua bahan.
CINCALOK OMELETTE
Ingredients
3 eggs/ 3 biji telur
1 large onions / 1 biji bawang besar 
3 tablespoon of cincalok / 3 sdb cincalok
1 red chili (thinly sliced) / 1 biji cili merah hiris halus
Spring onions (chopped) / daun bawang dicincang
2 sausage sliced thinly / 2 sosej hiris nipis

  1. Break eggs in a bowl. / Pecahkan telur dalam mangkok
  2. Add cincalok and beat the eggs. / Masukkan cincalok dan pukul telur
  3. Add in onions, chili and spring onions. /Masukkan bawang cili merah dan daun bawang
  4. In an oiled pan, fry over low heat until omelette is cooked. / Panaskan minyak dan dadarkan telur hingga masak.

Saya memang tidak pernah memasak cincalok, malah memakanya pun jarang sekali. Tetapi entah kenapa baru-baru ini saya terpanggil untuk mencuba, mungkin cara persembahan majalah GoodFood mendorong saya untuk mencuba.  Saya masukkan resipi cincalok ini dalam list saya dan menantikan peluang untuk membeli cincalok. Ya lah bukan semudah itu untuk mendapatkanya.

Sebaik sahaja saya memperolehi cincalok saya terus mencuba tiga resipi cincalok yang popular iaitu, AYAM CINCALOK, SAMBAL CINCALOK dan TELUR DADAR CINCALOK.
Wee..... memang tidak disangka, sajian cincalok ini memang enak, cukup berselera dibuatnya. Sekarang Cincalok sudah masuk book, malah anak-anak saya pun sukakanya, terutama AYAM MASAK CINCALOK. ooiii, rugi kalau tidak mencubanya.

know what, sambal cincaluk tastes better if you put some petais into it. It is a 'must have' in my menu if i throw some makan-makan at my house with friends or relatives. salam.

sedap ye cencalok bila dibuat masak cam ni.tak dapat nak bayangkan rasanya.sebab dah lama tak merasa cencalok ni.nak kena try jugak la.rasa cam meletop je dalam botol tu..hehe
