FISH FINGERS WITH MANGO CHUTNEY


This is interesting, I was blog hopping and found this recipe in seasaltsforfood. blogspot.com, the fish fingers was common, but what attracted me to this recipe was the mango chutney. I see it was a great idea and a great combination running away from the normal serving of fried fish with tartar sauce. Crunchy, tasty with sweet soury dips. You should try this. If you find it hard to get hold of fresh fish, I would suggest you use the ready made fish cake and coat with bread crumbs. Though not 100% fresh but almost to the original.

FISH FINGERS WITH FRESWH MANGO CHUTNEY

INGREDIENTS

2 Pieces (350 g) Tilapia Fillet, cut into 5 long strips for each fillet

All Purpose Flour
1 Large Egg, lightly beaten
Panko (Japanese Breadcrumbs)
Peanut or Canola Oil for frying
Lime Wedges
Sweet Potato Fries (optional)



Marinade

1 Tbsp Freshly Squeezed Lime Juice

3 Tbsp Finely Chopped Coriander
1 Green Chili (Jalapeno or Serrano), seeded and minced
1 Scallion, minced
1 Clove of Garlic, minced
1 tsp minced Ginger
1/8 tsp of Sea Salt
¼ tsp Chili Flakes
1 Tbsp Peanut Oil



PREPARATION

  1. Add the fish strips to the marinade and turn to coat well. Cover and refrigerate for 2 to 4 hours.
  2. Toss the marinated fish strips with the flour, dip into the beaten egg, and coat with Panko (Japanese breadcrumbs).
  3. Heat the oil in a large cast-iron pan or non-stick pan until hot. Lower the heat to medium and shallow fry the fish strips for about 2 minutes on each side. Remove with a slotted spoon and drain on paper towels. Serve warm with the fresh mango chutney, lime wedges, and sweet potato fries, if desired.

Biasanya kalau ikan dibuat Fish N Chips atau goreng bersalut sebegini, kita lebih gemar menyediakan tartar sos, tapi kali ini ada kelainannya. Resipi ini menyediakan Chutney Mangga sebagai sosnya. Memang menarik dan sedap. Cara membuat chutney mangga ini, kalau yang dah biasa buat sambal quini atau bacang lebih kurang begitulah/ Resipi ini saya dapati dari seasaltwithfood blog. Untuk resipi ini sebaik-baiknya gunala ikan fresh yang diambil isinya. Tetapi jika mempunyai masalah untuk mendapat ikan segar boleh gunakkan ikan frozen, dan jika susah juga untuk mendapatkan ikan frozen bolehla juga guna fish kek yang dijual dipasar. Celup aje fish cake tu dengan serbuk roti dan goreng kekuningan,. Kalau menggunakan fish kek ini rasanya akan jadi seperti keropok lekor tetapi betul-betul nak kesegaran ikan kenalah ikthiar mencari ikan segar. Apa pun memang sedap resipi ini sesuai untuk juadah petang dan akan menjadi kegemaran anak-anak. - SELAMAT MENCUBA

Mango Chutney dan ayam panggang maghribi tu nampak menyelerakan. Anak2 sy tak suka sangat makan ikan, kalau digantika dengan fillet ayam cecah dengan mango chutney mesti sedap jugak kan
