MINI STEAM PUMPKIN CAKE/ APAM LABU

 

To be frank I just don't know how to categorize this cake whether it falls under Apam or Steam Cake. The problem was, this cake has both Apam and Steam Cake features. Anyway I leave to viewer to decide. This cake is always on the top of the list. A favourite that no one should ignore. For this recipe I deviated from the original recipe, instead I used Kak Ita Apam Pisang recipe. The texture is soft, sweet and fluffy. Presentable enough to serve in functions or party. Serve best with fresh grated coconut. - Try this....Yummy......


INGREDIENTS
75 gm corn oil / 75 gm minyak jagung
100 gm castor sugar / 100 gm gula kaster
150 gm self raising flour / 150 gm tepung naik sendiri
200 gm mashed pumpkin / 200 gm labu lecek
2 eggs / 2 biji telur
1/8 tsp soda bicarbonate / 1/8 sdt soda

PREPARATION
  1. Sieve flour and soda and leave aside / Ayak tepung dan soda, letak sebelah
  2. In a mixing bowl, whisk eggs and sugar till fluffy and add in pumpkin / Dalam mangkuk pukul telur dan gula hingga kembang. kemudian masukkan pumpkin
  3. Slowly add in flour and corn oil /Perlahan-lahan masukan tepung dan minyak berselang seli.
  4. Pour into ramekin 3/4 full and steam for 10 minit. / Masukkan ke dalam acuan muffin dan kukus selama 10 minit.

Apam Labu yang menjadi kegilaan semua. Saya tidak menggunakan resipi yang digunakan oleh kekawan sebaliknya saya menggunakan resipi Apam Pisang dari buku Kuih Tradisional Rasa Baru , buku masakan Kak Ita. Rasa macam Kek Kukus, cuma kurang diminati oleh anak-anak kerana rasa dan aroma Labu ini, Apa pun kuih ini sedap dan comel, sesuai untuk minum petang dan tak kurang menarik juga untuk dipersembahkan di majlis-majlis atau party.
