PATYSKITCHEN BLUEBERRY DAY,...don't get me wrong, we are not in States, we are in Malaysia, we don't have such event as National Pancake Day or event National Pumpkin Day, I called this PATYSKITCHEN BLUEBERRY DAY following the abundance of blueberry that I had. I was excited when I saw a packet of blueberry cost RM8.90 as compared to RM15 that I used to buy. I bought 5 packets, ate raw 1 packet and left me with 4 packets to create creative cooking. So here what I had used the blueberry for, Blueberry Banana Pancake, Blueberry Crepes (which is in my earlier entry), Blueberry Walnut Muffin, Blueberry Tarts and Blueberry Cheese Cake (will be featuring this later).
Here is one of my favorite pancake recipes - Blueberry Banana Pancake. In this recipe, I am using banana to add moisture, boost nutrition and add flavor. The banana also makes the pancakes super puffy. I added blueberry since they are loaded with antioxidants and bursting with flavor (and they compliment banana so well!).
BANANA BLUEBERRY PANCAKE 2 cups white or regular whole-wheat flour/ 2 cawan tepung1 tablespoon baking powder / 1 sdt baking powder2 teaspoons cinnamon powder / 2 sdt serbuk kayu manis1/2 teaspoon salt / 1/2 sdt garam2 cups milk / 2 cawan susu2 large eggs / 2 biji telur1 cup mashed banana / 1 cawan pisang yang dilecek1/3 cup packed brown sugar / 1/3 cawan gula pasir merah1 cup fresh blueberries / 1 cawan blueberryPure maple syrup /Sirap Maple.
- COMBINE flour, baking powder,cinnamon powder and salt in large bowl. Combine milk, eggs, banana and sugar in medium bowl; add to flour mixture. Stir just until moistened (batter may be lumpy). Fold in blueberries./Satukan tepung, baking powder, serbuk kayu manis dan garam dalam satu bekas. Dalam satu mangkok yang lain satukan susu, telur, pisang dan gula. Masukkan blueberry. Campurkan kedalam adunan tepung. Kacau sebati dan sehingga adunan menjadi lincin.
- HEAT griddle or skillet over medium heat; brush lightly with oil. Pour 1/4 cup batter onto hot griddle; cook until bubbles begin to form (about 2 minutes). Turn; continue to cook about 1 minute longer or until golden brown. Repeat with remaining batter./Panaskan kualu, leserkan minyak dan sendukkan adunan ke atas kuali, biarkan pankek menampakkan buih-buih, alihkan dan terus masak lagi beberapa minit dan sehingga kekuningan. Ulangi proses sehingga habis.
- SERVE with maple syrup./ Hidang bersama sirap.

Jangan salah faham, sebenarnya PATYSKITCHEN BLUEBERRY DAY ni adalah ekoran dari terlalu banyak blueberry di rumah, maka untuk minggu ini semua resipi kena gunakan blueberry. Kebetulan saya membeli 5 paket blueberry, 1 saya makan begitu aje, baki empat lagi kenalah saya reka untuk dijadikan sajian. Saya beli blueberry ini bukanya apa, sebenarnya terlalu terkejut dengan harga DURIAN RUNTUH, biasanya harga 1 packet RM15 tapi kali ini RM8.90 jadi saya borong habis la.
Saya memang suka buah ini walau pun agak masam sedikit tetapi keranggupannya yang menyedapkan buah ini. Dari empat paket inilah saya hasilkan BLUEBERRY CREPES, BLUEBERRY BANANA PANCKE, BLUEBERRY MUFFIN, BLUEBERRY TARTS, BLUEBERRY CHEESE CAKE dan BLUEBERRY SMOOTHIE . Tapi untuk entry ini saya cuma nak berkongsi resipi BLUEBERRY PANCAKE, BLUEBERRY MUFFIN dan BLUEBERRY TARTS. Untuk BLUEBERRY CREPES sila lihat entry saya yang terdahulu. Bakinya akan saya masukkan dalam entry yang akan datang mengikuti tema entry saya.
BLUEBERRY PANCAKE ini adalah antara pankek favorite saya. Tekturenya lembut dan gebu. Sedap dimakan dengan sirap maple dan sedikit blueberry jam.___________________________________________________________________________

wah kak paty kalau buat muffin lagi sedapkan..kita suka blueberry yg biji2 gini...terasa gitukan..tapi takut nak beli mahal benar....
Salam Kak Asma, tak mahal sekarang ni, 1 paket RM8.90, rasanya tengah sale. Dulu ya harganya RM15.00 sepaket. Boleh cari dekat Jusco memang berbaloi. Masa sale ni la sedap kita mereka nak buat kuih.
