CHRISTMAS STEAM FRUIT CAKE - KEK KUKUS BUAH


Am not celebrating Christmas but I have an obligation to deliver this cake to a friend for his Christmas celebrations. I got the recipe from - http://fromintankitchen.blogspot.com/2011/09/kek-buah-kukus-permintaan-seseorang.html, I made 1 1/2 batch to get the height of the cake. It turned out well but honestly I can't comment on the cake..as this is the first time am making it not for me for someone..ha..ha..but the way I looked at the cake..am confidence it is good  and true enough my friend said it was good.

I covered the cake with white fondant and used the christmas theme colour red and green.


450 g butter /450 g mentega - I used golden churn
400 g brown sugar /400 gula perang atau gula halus- ita guna gula perang
5 eggs large grade A / 5 biji telur - grade A
600 g flour / 600 g tepung gandum
1 tsp soda bicarbonate / 1 t1 sk bicarbonate soda- ita letak baking powder
1 tsp cream of tartar / 1 sk cream of tar-tar
1 tsp nutmeg powder / 1 sk serbuk pala atau serbuk kayu manis- ita guna kulit kayu manis
450 g mix fruits - I dried it first / 450 g buah2an campuran(mix fruits)
150 g slice almonds / 150 g kekacang badam - cincang- ita tak letak
1 tsp fruits essence / 1 sk esen buah2an atau  oren atau vanilla - ita letak oren
220 g graulated sugar /220 g gula pasir - utk gula hangus 


Sieve all the dried incredients and add in the mix fruits, set aside - / Ayak tepung, baking powder, tatar dan serbuk kulit kayu manis dan gaul bersama buah2an campur dan kekacang. Ketepikan.

Whisk butter and brown sugar till white and fluffy /Mentega dan gula perang dipukul hingga kembang dgn mixer. 

Add eggs one at one at a time / Masukkan telur satu-persatu dan terus pukul.
Add essence / Masukkan juga esen pilihan.
Slow the mixer and slowly add in the flour and fruit mixture...you can use spatula here /Perlahankan mixer dan masukkan campuran tepung sedikit2 hingga habis.

Add the same time caramalised he granulated sugar and pour into the batter. /Pada masa yang sama,gula pasir di goreng hingga hangus atas api perlahan,matikan api dan tuang kedlm campuran yang sedang diputar tadi dan gaul  hingga sebati.

Combine till well blend . /Matikan mixer dan kacau adunan dgn senduk supaya benar2 rata.

Pour into grease tin /  Tuang adunan ke dlm loyang yg telah di alas dan digris keliling.

Cover tin with aluminium foil and tied around tin / Tutup loyang dgn aluminium foil dan ikat dgn tali rafia sekelilingnye.

Steam for 4 hours / Kukus kek selama 4 jam.

Note from the cook :-

Steam Cake at high fire for the first hours and lower to normal fire for the last three hours /
Saya kukus dgn api kuat pd 1 jam pertama dan tukar pd api sederhana utk 3 jam seterusnya.Buka alumfoil setelah masak dan sejukkan kek. Kalau saya tak menggunakan kekacang, saya tambah gantikan dgn buah2an campuran lagi menjadi 600 g.


Seingat saya arwah umi memang terkenal dengan kek kukus buahnya...tapi tak seorang pun anaknya mewarisi bakatnya mahupun menyalin resipiny..kini bila perlu memang terkial-kial mencarinya.....maka kenalah ambik resipi kekawan. Saya buat kek ini untuk teman yang meraikan Christmas...tapi cuma buat aje rasanya tidak. Kata teman saya memang sedap. Sempena dengan perayaan yang diraikannya makan saya balutkan kek dengan fondant putih yang dihiaskan dengan warna tema Christmas.... Resipi saya ambil dari -

STEAM CHOCOLATE CAKE WITH CHEESE LAYER AND MOUSSE GANACHE FROSTING




I thought this might be interesting to some of you who may like doing a steamed layered cake instead of a baked one. Of course then, if you just look at the pictures, I dont think you can tell that this is a steamed cake.This cake has become very popular among the blogger and many had tried and this is the cake that I've been aiming to make for a month. The only thing that hindered me from making one is due to my tight schedule and my Fondant cake order. This cake carves and stacks well for simple or elegant specialty cakes.anache. I stacked the cake with cheese layer I covered it with chocolate ganche

. This is the most requested chocolate cake that I make and is the favorite chocolate cake choice for family potlucks, parties, birthdays and weddings.

STEAM CHOCOLATE CAKE
The Chocolate Cake
1 cup sugar / 1 cwn gula halus
1 cup cocoa powder / 1 cawan serbuk kok
1 cup evaporated milk / 1 cawan susu cair
1/2 cup condensed milk / 1/2 cawan susu pekat
1 cup vegetables oil / 1 cawan minyak sayur
1 tsp vanilla essence / 1 sk vanilla
1 tsp baking powder / 1 sdt baking powder
1/2 tsp baking soda /1/2 sdt baking soda

Heat up all ingredient over low heat until smooth and set aside / Masak semua bahan A sehingga lincin dan sejukkan

Ingredients B
3 eggs / 3 biji telur

Beat eggs till light and fluffy / Pukul telur sehingga naik dan gebu

Ingredients C
1 cup  Self Raising Flour  / 1 cawan tepung tepung naik sendiri

When ingredients A cool add to eggs mixture mix well and add flour . Divide ingrediets into two/ Bila bahan A sudah sejuk, masukkan kedalam adunan telur gaul rata kemudian masukkan tepung. Bahagikan adunan kepada dua.

Cheese Ingredients
250 g cream cheese / 250 g krim cheese
60 g caster sugar / 60 g gula caster
25 ml water / 25 ml water
25 g flour ./  25 g tepung

Whisk all cheese ingredients and set aside / pukul semua bahan bahan cheese dan letak sebelah.


How To Steam The Cake
Heat up steamer / Panaskan kukusan api jangan terlalu besar

Divide chocolate mixture and pour 1 st portion into a greased and lined 8" round cake tin and steam for 15 minutes. Then add in the cheese layer and steam for another 15 minutes. Finally steam the final chocolate layer and steam until it is done. Let the cake cool down completely before adding the mousse. / Bahagikan adunan koko kepada dua bahagian. Oleskan acuan 8 inci dengan minyak dan kukus bahagian koko yang pertama selama 15 minit. Kemudian masukkan bahagian cheese dan kukus selama 15 minit lagi akhir sekalai masukkan bahagian koko yang terakhir dan kukus sehingga masak. Sejukkan
  
The Chocolate Mousse
200 ml whipped cream / 200 ml krim putar
3 tbsp sugar / 3 sdb gula
3 tbsp cocoa powder / 3 sdb serbuk koko
1 tbsp gelatine powder mixed with 4 tbsp warm water / 1 sdb gelatine dibancuh bersama 4 sdb air suam 

1. In a small pot, sprinkle gelatine powder warm water and let sit for 5 minutes. Stir and melt over simmering water ( double boil ) till gelatine fully dissolves. Remove from heat.

2. Whip the cream till soft peak add sugar till smooth and mix in the cocoa powder
.
3. When the gelatine mixture has slightly cooled down, pour the gelatine mixture into the cream  mixture and mix until well blended.

3. Spread the filling ontothe cooled cake. Freeze the cake till the filling set, about 45 minutes to an hour. Ice the cake with chocolate ganache


Ini adalah kek kukus Cokolat cheese yang telah divariasikan dengan meletakkan lapisan cokolat mousse dan cokolate ganache. Ramai yang sudah mencuba resipi ini tetapi saya baru cubanya minggu lepas. Tambahan mousse dan ganache adalah diinspirasikan oleh teman kita Juwita dari bumi Sakura, saya lihat presentation Juwita dalam majalah Aroma..so saya jadi tertarik dan membuat pembaharuan tersebut. Cukup sedap kek ini. Memang idea yang baik membuat perubahan pada kek yang. Very rich in chocolate and mousse dan ganache menambahkan kelazatan pada kek ini.

TO DIE FOR STEAMED CHOCOLATE CAKE / KEK CHOCOLATE KUKUS CHEF ZUBAIDAH



I found this recipe in  http://noorsha.blogspot.com/2011/04/kek-coklat-lembab-kukus-chef-zubaidah.html  and it is TO DIE FOR! This is the cake that popular among the foodie blogger in Malaysia. Recipe was from Chef Zubaidah and many had tried. It's so easy to make, looks beautiful and no frosting is needed - it's already rich enough! however  I made mine with some chocolate ganache. This is hands-down the most deliciously moist, sinfully rich, to-die-for chocolate cake ever. It's honestly the best cake I've ever made.

Here's how and what you need

**1 tin susu  cair / 1 can evaporated milk
**200 gm minyak  sayuran / 200 g vegetable oil
**250 gm susu pekat / 250 g condensed milk
**100 gm serbuk koko / 100 g cocoa powder


250 gm gula kastor / 250 g castor sugar
4 biji telur -/ 4 eggs
150 gm tepung gandum / 150 g flour
1st soda bikarbonat / 1 tsp bicarbonate soda
1 st baking powder/1 tsp baking powder

  • Campurkan kesemua bhn bertanda ** dan masak dgn api perlahan sehingga licin.  Tak payah sampai menggelegakCombine / Ingredients marked (A) in a saucepan. Stir over low heat until sugar is dissolved and smooth, turn off the fire and keep warm.
  • Pukul telur hingga kembang / Beat eggs till fluffy



Satukan dgn telur yg di pukul tadi dgn mixer..dan masukkan bahan kering / Add chocolate ingredients into beat eggs and stir till well mix Addt  dry ingredients and stir well 


Masukkan ke dlm tin yg di lapik & minyakkan. Kukus selama 1 jam dgn api sederhana. Pastikan air telah menggelegak sebelum di kukus./Lined 8 inch round baking pan. Pour the batter into the lined pan and place the pan into the steamer.Cover the top of the pan loosely with a piece of aluminium foil.Steam over medium heat for 1 hour.


Sejukkan dahulu sebelum di hiaskan dgn icing @ ganache./. Cool the cake in pan before turning out for further decoration. 

For chocolate ganache / Untuk Ganache
12 oz chocolate / 12 oz chocolate
1 cup crea / 1 cawan krim



Kek coklat dikalangan blogger..ramai yang sudah mencuba..saya baru hendak mencubanya. Resipi dari Chef ubaidah yang cukup sedap..lembut, lembap dan kaya dengan cokalat. membuatnya juga mudah. Sebenarnya kek ini tidak perlu dibuat frosting kerana sudah cukup kaya dengan coklat tetapi jika anda suka boleh dibuatkan sedikit ganache,

BEST EVER CHOCOLATE CAKE - THE STEAM VERSION




Indulge yourself with this heavenly moist and fudgy chocolate cake - perfect for celebrations birthdays, weddings and festive. This is a steam version and everything about this cake is divine. I made several times..it's easy to put together and the frosting of the cake is easy and fast. It's a hits around my house.

Best Ever Chocolate Cake - The Steam Version
2 cups all-purpose flour, plus more for pans

1 cup sugar
1 cup good cocoa powder
2 teaspoons baking powder
1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup warm water
¾  cup vegetable oil
3 extra-large eggs, at room temperature
½ cup condensed milk
1 teaspoon pure vanilla extract

  1. Preheat the steamer F. Prepare you cake pans. I used 8in rounds, you can use rectangle pans or cupcakes or whatever floats your boat!
  2. Sift the flour, cocoa, baking soda, baking powder, and salt into the bowl and mix until combined.
  3. In another bowl, combine the oil, water and vanilla.
  4. With the mixer on low speed, slowly beat eggs and sugar till fluffy.
  5. Alternately add the dry and wet ingredients. With mixer still on low, add the condensed milk and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans, covered with aluminium foil and steam for 1- 1 ½ hours  until a cake tester comes out clean.
  6. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely

Rasanya ramai yang setuju kalau saya katakan bahawa kek cokolat ini memang hebat. Ramai yang sudah mencubanya berulang kali. Ha..ha...ini kali kedua saya membuat. Menariknya tentang kek ini ialah ianya mudah disediakan. keknya fudgy, moist dan kaya dengan cokolat walaupun hanya menggunakan serbuk koko. berbagai cara boleh digunakan untuk menghiaskan kek ini. Untuk kali ini saya menggunakan cokolat ganache. Memang gandingan yang mantap antara cokolat kek dan cokolat ganache. Boleh juga digunakan buttercream. Memang kek yang tidak boleh ditolak, sesuai untuk sebarang acara.

STEAMED COCOA CUPCAKE/ KEK CAWAN KUKUS KOKO



This steam coco cupcake is the. most. delicious cupcake I've tasted.

It is moist, light, and tender. I made this cake last weekend to bring to my friend for dessert. Because I wanted it to not only taste ultra delish, but also to look pretty and presentable, made some cream and topped with grapes.

I saw this in  Saji July Issue  look so delicious,and yes indeed it was sooo delicious!! The sweetness of the cake  just right for me.


Steam Cocoa Cupcake / Kek Cawan Kukus Koko

1 cup sugar / 1 cawan gula
4 eggs / 4 biji telur
1 cup hot boiling water / 1 cawan air panas mendidih
1 cup corn oil / 1 cawan minyak jagung
½ cup condensed milk / ½ cawan susu pekat
2 ½ cup flour / 2 ½ cawan tepung gandum
½ cup cocoa pr mocha / ½ cawan serbuk koko atau mocha
1 tsp baking soda / 1 sdt soda
1 tsp baking powder / 1 sdt baking powder
1 tsp vanilla essence / 1 sdt esen vanilla


Lined muffin pan with paper cup. / Alas acuan muffin dengan paper cup
Sift the flour,cocoa powder,baking powder and baking soda into a large mixing bowl. Set aside. / Ayak semua bahan kering dan letak sebelah
Beat egg and sugar till fluffy / Pukul telur dan gula sehingga naik.
Add in hot water condensed milk and corn oil and mix well and add vanilla essence /Masukkan air panas, susu pekat dan minyak jagung dan esen vanila
Add the flour mixture / Masukkan bahan kering.
Pour the batter into the lined pan and place the pan into the steamer and steam for 15-20 minutes / Masukkan adunan dalam acuan yang disediakan dan kukus selama 15-20  minit
Cool the cake in pan before turning out for decoration. / Sejukkan dan hias

A MUST TRY CAKE - STEAMED PRUNE CAKE / WAJIB CUBA KEK KUKUS PRUNE




I was fortunate to find the recipe. I found this recipe in a cook book at the airport departure hall. The ingredients were so simple...I memorised every things and  to rest assure of the ingredients and method of preparing it I browsed the net a found the same recipe. Look like many had tried. I made one batch of it over the weekend and to my my surprise the cake was awesome..soft, fluffy and of course with the prune taste. If given the chance to make it again I will prepare some caramel sauce...I think it makes a good combination. This is a MUST TRY cake....after all the ingredients are simple and once you made this cake easily you can memorise the recipe.

Steamed Prune Cake / Kek Kukus Prune


250g butter
2 cups self raising flour
1 cup brown sugar
120g condensed milk
20 pcs prune - blend with a little bit of water
5 pcs prune - cut into a few strips
5 eggs
1 tbsp browning (optional, if you want the cake to have darker color)

Method :

Boil water in the steamer.

1- Beat butter, sugar and milk
2- Add in the eggs, one at a time.
3- Add in the blended prunes, mix thoroughly. You can add the browning at this point of time.
4- Add flour, mix well.
5- Spread in a 9' square tin, cover with cling wrap and steam for 11/2-2 hrs.
Resipi ini saya dapat dari buku masakan semasa saya di balai penantian di airport. Tahu tak saya tak beli pun buku resipi tu..bahanya terlalu mudah saya hafal aje bahanya...balik saya cuba cari kat net...jumpa dan ternyata sama. Sedap kek ini terutama yang sukakan buah prune. Keknya cukup lembut dan gebus. Untuk next round kalau saya buat...saya akan buat sos caramel untuk dimakan sama. Resipi yang mudah, ringkas dan WAJIB CUBA.

STEAM MOIST CHOCOLATE CAKE/KEK CHOCOLATE KUKUS


Many had tried this recipe. I was once sceptical but due to good responses from other bloggers I gave myself a BIG GO. True enough this cake is awesome, dense, moist and full of chocolate flavour. Now given a chocie of either baking or steaming I would prefer to make this steam chocolate cake. Trust me its' really...really scrumptious with delectable chocolate topping.

Kek yang cukup popular dikalangan blogger kek chocolate kukus. Hemmmmm saya baru hendak mencubanya. Pada mulanya agak sangsi tetapi beli dah lihat hasilnya cukup puas hati. Keknya lembap, lembut dan kaya dengan perisa cokolat. Menariknya kek ini hanya menggunakan serbuk koko sahaja. Sesuai buat sajian petang mahupun birthday cake.

WORDLESS WEDNESSAY WITH STEAMED BREAD AND CHICKEN CURRY



We used to have oven baked white bread, however this morning I gave a GO to try the steam version. I saw this recipe in Arah and Cik Maggis blog...it intrigued me so much. So happened that I have some left over chicken curry, I prepared this bread as early as 4 am...well it's my normal wake up time, and usually is either I recited Quran, or do some reading until the subuh prayer. So this morning I was at the kitchen kneading this bread.

Wow....it's fantastic!! soft and fluffy...no joke really soft and moist. I wonder how would it if I bake it...may be I should try to bake it next time. Just like the ordinary bread you can serve with curry, jam or even kaya. My big thanks to Cik Maggis and Ija from arah for sharing the recipe. This will definitely be a keeper for me and hopefully to my girls.


Steamed Bread


Print Save Recipe

Ingredients:


3 cups pau or waterlily flour / 3 cawan tepung pau.
5 tbsp caster sugar / 5 tbsp gula kaster.
1 ½ tsp instant yeast / 1 1/2 tsp yis segera.
2 tsp baking powder / 2 tsp baking powder.

Pinch of Salts / Secubit garam.
1 1/3 cup fresh milk / 1 1/3 cawan susu segar.
1 tbsp cornoil / 1 tbsp minyak jagung

Directions:


Combine all ingredients in a bowl except milk / Masukkan semua bahan-bahan kedalam mangkuk pengadun kecuali susu segar.
Add milk bit by bit and whisk slowly / Masukkan susu sedikit demi sedikit sambil uli perlahan-lahan Uli hingga sebati dan elastik dohnya.
Allow to rest for 1 hour / Perap selama 1 jam.
Punch dough and form into in balls. Place dough in a greased pan and allow dough to double up the size. / Kemudian uli buang angin dan bentukkan bulat bulat.atur dalam loyang yang telah disapu dengan sedikit minyak masak.Biarkan doh kembang hingga dua kali ganda saiz asal.

Heat up steamer and stem bread for 20 minutes / Panaskan air untuk kukusan.Kukus sehingga masak.
Hari ini saya betul-betul happy, roti kukus saya begitu gebus dan lembut. Rasa puas dan gombira ya lah seawal pukul 4 sudah bangun mengguli roti ini....bukan gitu bukanya saya bangun pukul 4 untuk buat roti ini tetapi pukul 4 pagi tu memang biasalah time saya bangun...tunaikan apa yang patut ditunaikan dan tunggu sampai azan subuh...tapi pagi ini tunggu subuh sambil mengguli roti....kalah cite Ali Baba kan. Resipi Roti Kukus ini saya tenguk di dapur CikMaggis dan Ija - Arah..mak aii roti yang dia orang buat lagi montok sampai menggunung tinggi naiknya. Roti ini memang lembut dan gebus....kalah yang beli dikedai tu, lembap dan memang cantik la. Saya hidang dengan kari ayam semalam...bukan main lain lagi anak dara dua orang tu makan. Yang seorang makan dengan kaya yang seorang lagi makan dengan kari. Siap berbekal lagi..ialah hari ini dia orang kena stay back untuk program kurikulum dia orang. Saya tidakbuat banyak ngam-ngam untuk tiga beranak makan dan saya simpan satu untuk experiment hendak tenguk kalau disimpan sehari masih lembut tak...ha...nanti saya maklumkan result experiment saya.
