RASPBERRY CHOCOLATE TARTS


Saya suka tart ni..manis-manis chocolate dengan masam-masam raspberry.....sedap dan tidak memualkan. Membuat Chocolate filingnya juga menarik, biasanya chocolate dicair bersama krim begitu aje tetapi resipi ini memerlukan kuning telur..jadi filingnya menjadi kental yang cantik berkilat. Robert Linxe"s Chocolate Tart

Ingredients

8 ounces (224 grams) bittersweet chocolate, finely chopped
2/3 cup (160 grams) heavy cream
2 large egg yolks, at room temperature
2 tablespoons (1 ounce; 30 grams) unsalted butter, at room temperature
1/2 moist, plump vanilla bean, split lengthwise
1 fully baked 6 1/2-inch (16-cm) tart shell made from Sweet Tart Dough

1.            Put the chocolate in a heatproof bowl and keep it close at hand. In a small bowl, beat 1 tablespoon of the heavy cream with the egg yolks just until the eggs are liquid. Check that the butter is soft but not oily. If necessary, either beat it with a rubber spatula to soften it or smear it against the counter under the heel of your hand.

2.            Pour the remaining cream into a saucepan, toss in the split vanilla bean, and bring the cream to a full boil. Pull out the vanilla bean, then pour the hot cream over the chocolate. Wait for about 30 seconds, then, working with a whisk, gently blend the cream into the chocolate. Still whisking delicately, incorporate the yolks, followed by the butter. Pour the ganache into the crust (if you have a little leftover, you can freeze it or use it to fill sandwich cookies). Jiggle the crust a bit to even out the ganache, and leave the tart on the counter until the filling set, about 20 minutes, depending on the temperature of your kitchen. (If your kitchen is really warm, pop the tart into the refrigerator for 20 minutes, just to set the ganache, then keep it at room temperature after it has set.)


Do ahead: The tart is best served at room temperature the day it is made. If you must keep it, refrigerate it over night, then let it stand at room temperature for about 2 hours before serving.

MINI MUSHROOM AND SHRIMP QUICHE


Quiche ini sesuai untuk party...atau jamuan ringan. Boleh dibuat dengan crust atau pun tidak. Kalau agak-agak malas hendak renyah..boleh beli pastry siap sebgai basenya. Untuk intinya pula apa aje boleh digunakan sausage, udang, ayam..daging apa-ape aje mengikut selerakita. Resipi ini boleh menghasilkan lebih kurang 12 biji quiche mini. Ngam-Ngam satu adunan. Sedap dan lemak.



Mini Mushroom and Shrimp Quiche
Perfect party snack or appetIzer,t is very versatile and can be used with ham, bacon,  or no meat at all. It makes a very nice dish for brunch or lunch

Pastry

300g plain flour /300 g tepung 
150g block margarine / 150 g margerine ketul
100ml water / 100 ml air

Custard
3 eggs / 3 biji telur
1 cup milk / 1 cawan susu segar
75g cheddar cheese, grated / 75 g cheddar cheese diparut.

Fillings
1/2 onion chopped / 1/2 biji bawang besar didadu
9 cherry tomatoes cubes / 9 bii ceri tomato didadu
150 g shrimps chopped / 150 g udang dicincang
4 mushrooms / 4 biji cendawan butang dicincang
scallions chopped / daun bawang dicincang
1 tbsp butter / 1 sdb mentega


Method

Light the oven to Gas Mark 5/190°C. / Panaskan ketuhar 190 C

Put the flour and margarine into the mixing bowl and rub together to form small crumbs. / Satukan tepung dan majerin dalam mangkok dan gaulkan sehingga menjadi serbuk roti


Add the water and mix together using the pallet knife. / Masukkan air dan gaul rata.

Flour a worktop surface and roll out the pastry to a thin layer. Using the pallet knife or a shape cutter, cut out reasonable sized circles to fit the moulds and place into the moulds and up the sides. Push down to flatten matter if there are creases on the inside - / Canai dan terap dalam acuan



In the jug of milk, crack the eggs and beat gently. Add the cheese and mix using a fork or whisk. / Dalam mangkok atau jug pukul telur dan masukkan susu, masukkan garam dan sedikit lada sulah gaul rata.

Untuk intinya

Sautee the, onion, shrimps and mushrooms and when cooked, put evenly into the quiches. / Tumiskan bawang besar sehingga layu. Masukkan udang dan cendawan. Masukkan garam dan perasa, angkat sejukkan dan masukkan dalam setiap acuan quinche tadi

Pour the egg, milk and put the cherry tomato dan scallion, cheese evenly into the pastry moulds. DO NOT OVER FILL!/ Tuangkan adunan telur tadi jangan sampai penuh..kemudian masukkan tomato dan daun bawang..akhir sekali taburkan keju cheddar

Bake for 15 minutes until golden brown. / Bakar selama 15 minit atau sehingga kekuningan

SARDINE PASTRY PUFF

There are two ways of making this puff, either by using muffin pan or just fold like you are making curry puff. I made both. I used the store bought pastry.
This snack is perfect HI-TEA or party menu. For the filling you can  tuna, sardine, chicken potato, beef potato or even mushroom. Of course sardine is top on the list. Here's how I made my sardine puff.
 Ingredients for sardine: Adapted from ViviLim
  • 1 small tin of sardine (mashed)
  • 3 tablespoons of oil
  • 2 red onions or ½ big onions (chopped)
  • 1 clove of garlic (chopped)
  • Coriander leaves (chopped)
  • 1 tablespoon of chilli paste
  • 5 fresh button mushrooms (sliced thinly)
  • Salt
  • Sugar
  • 1 teaspoon of tamarind juice/lemon juice
METHODS:
  1. Heat up the oil and fry the garlic and red onions until fragrant.
  2. Add in the chilli paste and stir it until fragrant.
  3. Put in the lemon juice, salt and sugar in ideal quantity.
  4. Add in the sardine and keep stirring it for a while.
  5. Then add in the fresh mushroom and coriander leaves. Stir well and off the heat.
  6. Lets it chill for a while.
  7. Take out the pastry skin from freezer. Keep it in room temperature for about 15-20 minutes.
  8. Divide and cut the 1 piece of pastry skin into 2 parts. Fill in the sardine into the first part meanwhile the other part (with small cut art) will fold and seal it. Press the pastry over by using folk.
  9. Glaze the top with beaten egg and spread the black pepper on surface.
  10. Repeat the same procedures above for the other pastry.
  11. Place the pastry on the tray (slather with a little bit of butter)
  12. Bake with 190C within 20-25 minutes or until it change to golden yellow colour.

Di sekolah dulu saya diajar buat sardine rolls, memang sukalah resipi sardine rolls, tetapi sekarang adanya pastry puff yang siap, memudahkan lagi membuat puff sardine ini, hanya perlu siapkan inti aje. Cara membuat pun boleh menggunakan berbagai teknik, bakar cara pakai acuan muffin ataupun cara lipat mahupun gulung. Cukup sesuai di simpan dalam fridge sebagai persediaan tertamu yang tidak diduga. Untuk inti sardine pun bolehlah buat pakai sambal mahupun mentah begitu aje, dua-dua cara pun sedap.

APPLE FOLD AKA APPLE FLAP

This is an alternative to APPLE PIE, if you don't want to bake a big pie. I used store bought pastry and heaped with apple fillings, fold and bask. Its simple that's every bit as scrumptious !!!!
Ingredients
1 1/2 cups thinly sliced, peeled apples (1 1/2 medium)
1/4 cup packed brown sugar
2 tablespoons water
1 teaspoon lemon juice
1/2 tsp cinnamon powder
 
 
In 2-quart saucepan, mix apples, brown sugar, 1 tablespoon of the water and the lemon juice. Cook over medium heat, stirring occasionally, until bubbly. 
 
Reduce heat to low; cover and cook 6 to 8 minutes, stirring occasionally, until apples are tender. 
Gradually stir into apple mixture, cooking and stirring until mixture thickens. 
 
Meanwhile, heat oven to 375°F.
 
Prepare or buy (shortcrust) pastry. Roll the pastry not too thinly . 

Heap some filling on each circle of pastry and fold the edges over it, gluing the edges down with water.

Brush each applefold with the egg yolk, which has been slightly beaten in a table spoon of water or use the mix of milk and sugar. 

Put the folds on a buttered baking tray and bake them in the middle of a hot oven in approx. 10 minutes until golden brown and well cooked. Eat them not too long afterwards as the crust will soon become limp because of the moist filling.

(for appr. 12 pieces) :. For brushing : 1 egg yolk or a mix of milk and sugar

Kalau anda terasa nak makan apple pie dan malas hendak membuat pie besar anda boleh menggunakan method ini mudah ringkas dan cepat. Saya menggunakan pastry siap dari kedai. Boleh didapati di TESCO, pastry berkeping, anda cuma perlu menyiapkan inti apple aje. Masukkan inti, lipat, sapu telur di atas pie dan bakar. Dalam beberapa minit aje anda boleh menimati pie apple.

MINI CHICKEN PIE

It is interesting to watch Martha Stewart with her guest chef prepared the pot pie chicken. So tempting!!!. I have  always wanted to try this. The best that I have tasted was at the DOME, awesome.

I have one constraint with this recipe -  the pastry. Making puff pastry takes a lot of time because the dough needs lengthy rests after the initial détrempe stage and between its many "turns" (each series of rolling, folding, and turning). Wow, I don't think I have the patience to do so.

I used the store bought , it's good enough. I am happy with the result and I made a promise to myself that I will soon learn to make the pastry. There's so many things that we can create out of the pastry croissant is one of it. Insyallah I will.

One thing about chicken pie is that beside the pastry, the fillings have to be good too. There are a few variations for the fillings, curry, garlic or even cream of mushroom style. For this recipe I made a simple chicken and mushroom filling. So here's my Chicken pie recipe :-

Filling:
1 large potato. Diced
1 large onion. Diced
1 carrot. Diced
½  cup frozen green peas
1 cup mushroom, sliced
350g chicken meat, diced
200ml heavy cream
½ cup stock
2 tbsp corn flour mixed with another ½ cup chicken stock
Salt and pepper to taste

  1. Boil potato and carrot until semi cooked. Add in frozen green peas, and continue to boil for another 10 minutes. Drain and set aside.
  2. Heat about 2 tbsp of oil in wok and fry diced onion until transparent. Add chicken meat and mushroom, fry for a while to break up chicken. Add in boiled vegetable ½ cup chicken stock and heavy cream .Stir-fry for a few minutes. Add salts to taste.
  3. Add in the remaining chicken stock with corn flour mixture. Stir until the sauce has thickened. Set aside for later use.
For the Pastry


  1. Roll the pastry.
  2. Use cookie cutter, cut the pastry.
  3. Press the pastry in the ramekin. Add the fillings. Cover and seal.
  4. Glaze the top with mixture of egg yolk and milk.
  5. Bake till brown. 180 C for 30 - 35 minutes.
  6. Serve with hot with some brown sauce and salad.

Pie Ayam ini memang favorite saya, suka makan tetapi tak pandai membuatnya. Paling ngeri membuat pastrynya, renyah dan rasanya begitu sulit sekali. Saya lebih gemar kalau untuk pie seperti ini menggunakan pastry yang berlapis-lapis. Pernah mencuba membuatnya tetapi tak pernah menjadi, so kali ini saya beli aje pastry yang dah siap, balik cuma canai aje dan ikut bentuk sendiri, cara pun copy cat style bakery, guna acuan aluminium senang. 

Pada awalnya hajat hati tu nak buat chicken pot pie ala Martha Stewart, tapi kalau saya buat chicken pot pie ia harus dimakan panas-panas, takut anak-anak tak sempat balik on time jadi saya tukar plan buat cara ini, mudah walau sejuk nanti tetap sedap dimakan. Untuk intinya pula saya tumis biasa aje, tidak pakai rempah sebab saya masukkan cendawan tin. Resipi ini sedap dimakan pana-panas bersama brown sos dan sedikit salad.

FRESH FRUITS PIE WITH CUSTARD CREAM

I have always wanted to make this for quite sometimes. I used to watched Chef Wan with his fabulous pie recipe but never got the opportunity to do so. Recently I did some research on this and found few wonderful tips in making a perfect pie  crust. I will definitely like to share this with you. You can use this pie crust recipe for any pie or tarts that you wish to bake. My next pie recipe will be pumpkin pie, love seeing how Martha Steward did her pumpkin pie. I am really excited about the whole things and look's like this week is gonna be a pie week for PATY'SKITCHEN so stay tune.

If you do choose to make your own pie crust, there are a dozen methods out there for doing so. Every cook and every cookbook seems to have their own favorite. All butter, all shortening, vegetable oil, part butter/part shortening, lard; the list goes on.
The following are instructions for making 
1) a basic butter crust (pâte brisée) for sweet and savory pies and tarts,
2) a butter crust with ground almonds replacing some of the flour for added flavor for sweet pies such as apple pie,
3) a pre-baked pie crust needed for dishes such as quiche,
4) a combination butter and shortening crust, and
5) an egg wash finish for the pie.


The instructions will yield enough dough for 1 10-inch pie with a crust top, or 2 10-inch topless pies or tarts. If you are making a tart or just a pie bottom, cut all ingredients in half.

Cook's Notes
One of the secrets to a flaky pie crust is to work with very cold butter. Cut the butter into cubes and freeze, at least 15 minutes, best over an hour or even overnight. The minute I even think I might want to make a pie, the first thing I do is cut some butter into cubes and put it in the freezer.

INGREDIENTS

For the tart dough:

All Butter Crust for Sweet and Savory Pies (Pâte Brisée)

  • 2 1/2 cups all-purpose flour, plus extra for rolling
  • 1 cup (2 sticks or 8 ounces) unsalted butter, very-cold, cut into 1/2 inch cubes
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 6 to 8 Tbsp ice water
 PREPARATIONS


Combine flour, salt, and sugar in a food processor; pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add ice water 1 Tbsp at a time, pulsing until mixture just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready. If the dough doesn't hold together, add a little more water and pulse again
 
Gently shape into 2 discs. Knead the dough just enough to form the discs, do not over-knead. You should be able to see little bits of butter in the dough. These small chunks of butter are what will allow the resulting crust to be flaky. Sprinkle a little flour around the discs. Wrap each disc in plastic wrap and refrigerate at least 1 hour, and up to 2 days.
Remove one crust disk from the refrigerator. Let sit at room temperature for 5-10 minutes in order to soften just enough to make rolling out a bit easier. Roll out with a rolling pin on a lightly floured surface to a 12-inch circle; about 1/8 of an inch thick. As you roll out the dough, check if the dough is sticking to the surface below. If necessary, add a few sprinkles of flour under the dough to keep the dough from sticking. Carefully place onto a 9-inch pie plate. Gently press the pie dough down so that it lines the bottom and sides of the pie plate. Use a pair of kitchen scissors to trim the dough to within 1/2 inch of the edge of the pie dish.


If you need to pre-bake either crust, follow these directions: 1. After placing dough into pie pan, freeze until firm, about 15 minutes.
2. Preheat oven to 350 degrees F.
3. Cut a large circle of parchment; fit into the pie shell, extending above edges. Fill the shell with pie weights or dried beans.
4. Bake pie shell 15 minutes at 350 degrees F. Remove weights and parchment; bake 10 to 15 minutes more until golden brown. Cool completely on a wire rack.

Prepare the custard filling. Add filling to the pie. 

Arrange the fresh fruits on the pie.

For the pastry cream:
2 cups half-and-half
1/2 cup sugar
Pinch salt
3 tbsp. cornstarch
4 tbsp. cold unsalted butter, cut into 4 pieces
1 1/2 tsp. vanilla extract

For the topping:


1/2-1 cup blueberries
1/2 pint strawberrries, halved.
Apple jelly, for glazing

To make the pastry cream, heat the half-and-half, 6 tablespoons of the sugar, and the salt in a saucepan over medium-high heat until simmering, stirring occasionally to dissolve the sugar.  Meanwhile, combine the egg yolks and remaining 2 tablespoons sugar in a medium bowl and whisk until the sugar has begun to dissolve and the mixture is creamy, about 15 seconds.  Whisk in the cornstarch until combined and the mixture is pale yellow and thick, about 30 seconds.

When the half-and-half mixture has reached a simmer, slowly add it to the egg yolk mixture to temper, whisking constantly.  Return the mixture to the saucepan, scraping the bowl with a rubber spatula.  Return the mixture to a simmer over medium heat, whisking constantly, until a few bubbles burst on the surface and the mixture is thickened and glossy, about 30 seconds.  Off the heat, whisk in the butter and vanilla.  Strain the pastry cream through a  fine mesh sieve set over a medium bowl.  Press plastic wrap directly on the surface to prevent a skin from forming and refrigerate until cold and set, at least 3 hours and up to 2 days.

To assemble the tart, spread the cold pastry cream evenly over the bottom of the tart shell.  Arrange the fruit on top of the pastry cream as desired.  Heat the jelly in the microwave for 20-30 seconds, just until slightly melted and easy to stir.  Using a pastry brush, paint a light layer of jelly over the fresh fruit. Keep refrigerated until ready to serve.
