LALA MASAK LEMAK CILI PADI / CLAMS IN YELLOW CURRY


Among the Malay's this is very famous way of cooking clams. Creamy and hot. You can add in turmeric or kaffir leaves to add the aroma of the dish.

INGREDIENTS
1 kg clams wash thoroughly
17 bird's eyes chilies
1 onion
2"turmeric root
1 tamarind skin
1 lemongrass crushed
2 cups coconut milk
1 cup water
salts to taste.

PREPARATION

Blend chilies, onion and turmeric root to form a paste. In a pot add in the blended ingredients, water and 1/2 of the coconut milk. bring to boil.
Add in clams and cook until the shells opened. Add in kaffir/turmeric leave and tamarind skin. Allow to simmer for a while and finally add in the remaining coconut milk. Add salts to taste. Ready to serve
