Good Morning, today 1st February 2012, 1st day of the second month......my goodness how time flies, we just completed the 1st month of the year and on this wordless Wednesday I made Tuna Salad Sandwich. The normal tuna sandwich, I just blended tuna and mayo, however this time around I made a tweak by adding some cottage cheese and dijon mustard. I happened to see the recipe in Simply Recipes and just give myself a try.
I find this tuna salad sandwich addictive I couldn’t resist making it and eating it. To make a good tuna salad, use, it may be better to use tuna packed in water, drain it, and then add a bit of your own high quality extra virgin olive oil.
A salad and sandwich combination can be both healthy and filling and watch out, I've warned you it's addictive and you will be asking for MORE !!!!!
Tuna Salad Sandwich Recipe
INGREDIENTS
- 1 can of tuna fish (if packed in water, drain it, and add a teaspoon of good quality olive oil)
- 1/3 cup of cottage cheese
- 2 Tablespoons of mayonaise
- 1/4 purple onion, chopped finely
- 1 celery stalk, chopped finely
- Juice of half of a lemon
- 2 Tbsp minced fresh parsley
- 1 teaspoon of Dijon mustard (optional - lettuce and sliced tomatoes)
- Slices of White bread, lightly toasted

METHOD
Mix all of the ingredients. Serve on toast, either open faced, or in a regular sandwich with lettuce and tomatoes. For a low carb option, serve on sliced lettuce.
