MONDAY BLUES BREAKFAST / EGG SALAD CROISSANT SANDWICH



It's Monday!!! it's the first day of the week and I don't know what went wrong with me...it seem as today is one of the lazy day for me..lost the mood and a bit restless, yeap...may due to a hectic Sunday I had. I joined thousand of Ipoh people greeting the PM in  RTC Gopeng yesterday...it was a huge crowd and find it interesting ..yeah..yeah I'm into the research on " blue ocean strategy so this RTC program is one of the 4th National Blue Ocean Strategic 
Thrust aimed at providing access to the rural community to activities with high-value added elements to give economic impact,

A transformation for the people in Perak...I love this, even though I hate crowd but for the purpose of hearing the plan and the vision of PM for Perak I forced myself into it...so this morning the whole body  ache.....but worth the effort and today a simple breakfast with store bought croissant and I made the egg salad to serve with the croissant.


Egg Salad Croissant Sandwich

PREP TIME: 30 minutes Source - PATYSKITCHEN

Ingredients:


1 hard-boiled* egg (large), peeled and chopped
1-2 Tbsp mayonnaise (to taste)
2 Tbsp chopped celery
1 Tbsp chopped green onion
Curry powder (to taste)
Salt and pepper (to taste)
1 leaf of lettuce
1 croissant

Directions:


  1. To make hard boiled eggs, place a few eggs in a saucepan, cover with at least an inch of water, preferable 2 inches. Add a half teaspoon of vinegar and some salt to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell). Cover the pan and bring the water to a boil. As soon as the water begins to boil, remove the pan from heat and let it sit, covered, for 12 minutes. Drain the water from the pan, add cold water to cool the eggs, let sit a couple minutes longer.
  2. Mash up the chopped egg a bit with a fork. Mix together the chopped hard-boiled egg, mayonnaise, celery and onion. Sprinkle with salt and pepper and curry powder to taste. Mix with a spoon.
  3. Toast your bread slices. Put a layer of lettuce on one slice of toasted bread, spread the egg mixture on top of the lettuce, put another slice of toasted bread on top.

Hari pertama, minggu ketiga bulan Februari.....sepatutnya bersemangat tapi saya hari ini memang tidak ada mood. seluruh badan terasa sakit...bukan apa...semalam dan Sabtu dua hari berturut-turut..cadangnya nak bersantai baca buku...alih-alih saya ke Gopeng menyertai PM Datuk Seri Najib dalam rancangan RTC...ha..ha..saya memang tidak suka crowd tapi kali ini entah kenapa terasa hendak melihat dan mendengar wawasan Datuk Seri.  Entah lah saya rasa terharu pula dengan usaha gigih Datuk Seri untuk membangunkan Malaysia... I love his visionary plan..kebetulan saya sedang mengkaji strategy "Blue Ocean Strategy" dan RTC-Gopeng ini pula jatuh dalam program Blue Ocean Strategy so....inilah peluang untuk saya membuat observations.  Very Interesting Plan.


Masa ada di sana tak ingat penat bila sudah balik rumah baru terasa satu badan sakit kerana banyak berjalan...ha..ha...pagi ini kena sarapan simple aje...beli croissant dekat bakery dan saya cuma sediakan salad telur aje. Kali ini masukkan sedikit serbuk kari..cuma nak test rasanya. So inilah breakfast MONDAY BLUES saya.
