Clear Chicken Soup with Rice Vermicelli

300 g skinless boneless chicken breast halves, cut crosswise into thin strips
- 3 tablespoons soy sauce
- 2 tablespoons oriental sesame oil
- 1.5 liter chicken stock
- 3 garlic cloves, minced
- 2 tablespoons minced peeled fresh ginger
- 1 tablespoon sugar
- 1 tablespoon seasoned rice vinegar
- 1 carrot cut into rings
- 9 shitake mushroom soaked and thinly slice
- 1 cup green peas
- 1 packet rice vermicelli (Bihun) soak and blanch
- 1/2 cup chopped fresh cilantro
- 1/2 chopped spring onions
- fried shallots
- Stir chicken, soy sauce and 1 tablespoon sesame oil in medium bowl to blend. Let stand 20 minutes or refrigerate up to 2 hours.
- Whisk garlic, ginger, sugar, vinegar, and chili sauce in small bowl.
- Heat remaining 1 tablespoon sesame oil in heavy large pot over medium-high heat. Saute the chopped garlic and ginger till brown. Add marinade chicken and fry for 3 minutes. Add chicken broth Reduce heat to low and simmer until chicken is cooked through, about 5 minutes.
- Add carrot, mushroom and green peas. Season soup with salts and pepper.
- Cook noodles in large pot of boiling salted water until tender, about 5 minutes. Drain.
- Serve noodle with soup and sprinkle green onions and fried shallots
Bihun soup ala Cina yang ringkas dan mudah. Cukup mudah menyediakanya dan sedap makan bersama sambal kicap atau cili oil.
