Simple and easy cupcake using pound cake mix with eggnog and nutmeg covered with Marshmallow frosting.
Eggnog Cupcake

1 (16-oz.) package pound cake mix - I used cake mix
2 large eggs
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon vanilla extract
Preparation
low speed with an electric mixer until blended. Increase speed to medium, and beat 2 minutes.
Place 24 paper baking cups in 2 (12-cup) muffin pans; spoon batter into cups. Bake at 350° for 18 to 20 minutes or until a wooden pick inserted in center comes out clean. Transfer to wire racks; cool completely.
Experiment dengan eggnog resipi baru-baru ini jadi baki-bakinya saya buat kek dan cupcake. Cupcake ini mudah aje menggunakan tepung kek yang siap, masukkan eggnog dan serbuk pala. Harum dan sedap. Frostingnya biasa aje saya gunakan marshmallow frosting.

Mesti wangi bau nutmeg bila membakar. Kita belum pernah buat marshmallow frosting lagi teringin jugak nak cuba.
