These Strawberry Cream Filled Sandwich Cookies will be a hit for kids of all ages. A combination of powdered sugar, and strawberry paste creates the creamy filling between these sandwich cookies. For a festive touch, tint the filling with red and green food coloring. I love these...a clone of macaroon, to those who had tried made macarons with failed results...at least these look a alike...ha..ha...my cheating heart!!!!!!
Hey it's not only macarons look a like...it tastes good too....may be it's too late for Valentine;s but these are presentable as a gift.
Strawberries Sandwich Cookies

- 40-60 g confectioners' sugar
- 200 g all-purpose flour
- 30 g cornflour
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 150 g unsalted butter, at room temperature soften
- 1 tsp strawberry paste
- 1 egg
- Make cookies: Arrange racks on bottom and top thirds of oven; preheat to 350ºF.
- Line two baking sheets with parchment.
In a bowl whisk flour, cornflour,baking powder and salts.
In an electric mixer, beat butter and sugar for 3 minutes. On lowest speed, add the egg. then add the dry ingredients. Continue mixing until dough comes together.
- Transfer dough to a well-floured work surface and knead briefly, then press into a small rectangle. Cut dough in half. Working with one piece at a time, roll dough to 1/4-inch thickness.
- Using a 1 1/2-inch round cutter, cut circles.- (I used Chinese Tea Cups) Gather up scraps, reroll and cut as many cookies as possible. Transfer them to baking sheets.
- Bake cookies for 6 minutes, then rotate pans (top to bottom and front to back) and bake 6 minutes longer. Remove baking sheets from oven and place on wire racks for a few minutes to cool before transferring cookies to racks to cool completely. Repeat with remaining dough.
- For the Strawberry Cream Filling:
1/4 cup room-temperature, unsalted butter
1/4 cup vegetable shortening
2 cups sifted confectioners’ sugar
1 teaspoon vanilla extract
2 tablespoons strawberry preserves
pink food colouring
- To make the strawberry cream, whip butter, shortening and strawberry preserves in a mixing bowl until creamy. At lowest speed, gradually beat in the sugar and vanilla. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.Fill a pastry bag fitted with a 1/2 inch round tip with the cream filling. Pipe the filling, following the heart shape of one cookie. Place another cookie on top. Press lightly to spread strawberry cream to the edge of the cookie. Continue this process with the remaining cookies.

- Masih belum berani untuk mendekati diri dengan dunia macaron, selalunya saya gagal mencapai matlamat dengan resipi yang menggunakan putih telur ni..jadi sebagai memujuk hati say klonkan macaron menjadi biskut sandwich. Biskut ini tidak keras dan tidak lembut ditengah-tengah antara kek dan biskut. Saya suka tekturnya tetapi anak-anak lebih suka jika ianya agak keras sedikit. Rupanya pun mirip macaron. Pada yang kreatif dan pandai bermain dengan warna biskut ini akan menjadi lebih menarik. Boleh menggunakan warna dan filling pilihan anda. Bagi yang masih gagal untuk menghasilkan macaron...jadikan resipi ini sebagai ganti...perlahan-lahan kita cuba pula macaron.
