GOOD MORNING !!! BELL PEPPER FRIED RICE AND ROSEMARY BLACK PEPPER DINNER ROLL

My Goodness!!! it's already a 10th days of year 2012..see how time flies so fast. It's Tuesday today and the weather is good here.. a bit chilling so let's warm up with some peppery dish. I made bell pepper fried rice and dinner roll with rosemary and black pepper. Something filling enough for my two girls to pack to school.

When come to fried rice I kept things pretty basic with a fried rice recipe. I love this bell pepper fried rice , simple ingredients but the hints of the bell pepper made this fried rice flavourful. I just used the green bell pepper, otherwise this is a pretty standard fried rice recipe that can be tailored to fit whatever foods you have on hand.

Fried rice works best with day-old rice. The rice dries out and is not as sticky. As usual a leftover from last night dinner. The dinner roll I made last night, simple plain dinner rolls that can be eaten with butter and jam or even with left over curry.
Bell Pepper Fried Rice

  • 3-4 cups chilled cooked rice
  • 2 eggs
  • 2 green bell peppers, cut into thin strips
  • 100 g chicken fillets
  • 4-5 cloves of garlic, minced
  • 4 scallions or green onions, chopped (1 tablespoon reserved for garnish)
  • 2 tablespoons oil
  • 2 tablespoons light soy sauce
  1. Heat a wok or large skillet over high heat. Beat one of the eggs in a bowl. Add about 1/2 teaspoon oil to the wok.  Add the egg and make scrambled eggs, remove the egg from the wok and set aside.
  2. Add 1 teaspoon of oil to the wok. Add the bell peppers. Fry, stirring occasionally, until the pepper begins to brown around the edges, around 3-5 minutes. Remove and set aside.
  3. Add 1 tablespoon of oil to the wok. Add the garlic and chicken fillet. Fry for3 minutes add in soy sauce and salts, then add in the rice, making sure to break up any clumps. Stir well, then fry for a few minutes, until rice is starting to brown.
  4. Return the peppers and eggs to wok.  Cook until everything is heated through, a couple minutes.
  5. Remove from heat, garnish, and serve.

SELAMAT BERSARAPAN
