BLESSING FRIDAY WITH LINGUINI AND SHRIMP SCAMPI


Pasta is one of my favorite foods and I am always looking for new ways to try it. I haven't try to make my own pasta yet...like the kids in Australian JR Masterchef...may be soon I will take up the skill of pasta making. I still used the store bought pasta, I would like to try some rivoli some day. I have been seeing recipes shrimp scampi for a while and I had been wanting to try it. 

Shrimp scampi is simply shrimp cooked in butter and garlic with a bit of lemon and white wine. I don't think you can go wrong with prawns, butter and garlic. As a Muslim there should not be any alcohol in our food..so I skipped the white wine part and substituted it with chicken stock and light soya sauce. My goodness it was fantastic..I made a lot of sauce, enough to smother the shrimp and pasta with some left over to soak up with bread. 

The shrimp scampi was really easy to make and it came together in no time. The shrimp were juicy and succulent and the butter and garlic sauce was really tasty. Coriander leaves and the light soy sauce made it irresistible meal. Trust me after trying this you will definitely wanna make it again and again...

Ingredients:

2 tablespoons olive oil / 2 sdb minyak zaiton
2 tablespoons butter / 2 sdb mentega
1 pinch black pepper flakes (optional) / 1 sdt serbuk lada hitam
5 cloves garlic (chopped)/ 5 ulas bawang putih dicincang
1 kg shrimp (shelled and deveined) / 1 kh udang besar dibuang kulitnya
1/4 cup chicken stock / 1/4 cawan stok ayam
1 lemon (juice and zest) / 1 biji kulit lemon
1 tablespoon butter / 1 sdb mentega
1/2 packet linguini (cooked) / 1/2 paket linguini masak
1 tablespoon parsley (chopped, optional) / 1 sdb daun parsley dicinacng
2 tbsp coriander leaves chopped / 2 sdb daun ketumbar cincang
3 tbsp light soy sauce / 3 sdb kicap cair
salts to taste / garam secukup rasa

Directions:
1. Heat the oil and melt the butter in a pan. / Panaskan minyak dan cairkan mentega
2. Add the black pepper flakes and garlic and saute until fragrant, about 1 minute. / Masukkan lada hitam dan bawang putih sehingga naik baunya
3. Add the shrimp and saute until cooked, about 1-3 minutes per side./ Masukkan udang dan tumis sehingga udang bertukar warna atau masak
4. Remove the shrimp from the pan. / Alihkan udang.
5. Add the chicken stock, soy sauce and lemon juice and bring to a boil. / Masukkan stok ayam, jus lemon dan kicap cair dan renehkan sebentar
6. Simmer the liquid until reduced by about half, about 3-5 minutes./ Renehkan sehingga agak pekat sedikit lebih kurang 3-5 minit
7. Add the butter, wait for it to melt and turn off the heat. / Masukkan mentega sehingga mentega cair
8. Add the shrimp, pasta and parsley and toss to coat. / Masukan udang, parsley, ketumbar dan pasta. sehingga bersalut.

Syukur Alhamdulullilah....dan tahniah kepada ibu-ibu yang anak cemerlang dalam PMR..bagi yang tidak berjaya mendapat stright's A..jangan putus asa...setiap anak ada keistimewaan masing-masing. Tahun ini saya tak risau sebab tak ada yang mengambil exam...tahun depan tahun saya..satu PMR dan satu SPM..moga kedua-dua anak saya nanti akan ikut jejak kakak mereka insyallah. Apa pun bersiapan akan bermula awal tahun...sekarang rela dahulu dan biar saya layan selera mereka.

Pagi Jumaat mulia ini saya buat pasta linguni bersama Scampi Udang.  Scampi Udang ini cukup terkenal di restuarant-restuarant luar. Membuatnya buka susah mana pun udang dimasak bersama bawang putih dan white wine..biasanya dia orang makan dengan pasta. bagi kita yang tak boleh masukkan wine dalam masakan gantikan aje dengan stok ayam, bersama lemon dan kicap cair...so kalau lihat scampi saya ini agak gelap sikit sebab masukkan kicap cair. Resipi ini juga banyak menggunakan butter yang dicairkan dalam kuah.

Cukup sedap dan menyelerakan.

nampak sedap menu akak ni...nak masak pun senang..stok udang saya dah habis pulak..kalau tak boleh buat makan tengah hari ni...hehehe
