BREAKFAST MENU - TUNA SANDWICH CUPS

Children will love eating tuna in bread cups. Take a whole new approach to sandwich by making patties with tuna mediterranean style.

Awesome for cocktail party and breakfast. Different ways of presenting your sandwich.

INGREDIENTS
4 teaspoons olive oil
8 slices white bread
2 (6-ounce) cans low-sodium tuna in water, drained and flaked
1/3 cup roughly chopped drained oil-packed sun-dried tomato halves
1/4 cup sliced ripe olives
1/4 cup finely chopped red onion
3 tablespoons low-fat mayonnaise
2 teaspoons capers
1/4 teaspoon freshly ground black pepper

1/2 cup cubed cucumbers

4 romaine lettuce leaves

Preparation

Steam white bread (to soften the bread) roll and cut the bread with cookie cutter. Spread olive oil in a muffin pan and insert the cut bread. Bake for 15 minutes or till golden brown.

Combine tuna and next 6 ingredients (through pepper). Place 1 lettuce leaf on each bread cups. Top the lettuce evenly with tuna mixture.
Serve immediately.
