MAMAK TEH TARIK SATU / ONE TEH TARIK

Mamak Teh Tarik Satu.....you will here this every morning in fact any time of the day. People of all races, religions and ages frequent "mamak" stalls to drink and enjoy a cup of hot teh tarik. "Mamak: here refers to an Indian Muslim, one of the ethnic group in Malaysia popular with this teh tarik and Nasi Kandar Restuarant. Teh Tarik  literally means ‘stretched tea’ or "pulled tea" is a favourite local pick-me-up.

To many Malaysians, nothing beats hanging out with friends at the Mamak’s and talking over a glass of hot, frothy teh tarik. I can say that and most Malaysian would agree that Teh Tarik is a national drinks that enjoy by most Malaysian.

I wrote about 1 Malaysian Breakfast in my entry as a guest post in Munaty Cooking on line, and teh tarik happen to be some of the brief description I made, ever since then I received email requesting "How to make Teh Tarik"? Well we don't really make teh tarik at home..it's still best to have teh tarik at the mamak stall and if we make teh tarik at home..most llikelihood we don't have an exact recipe for this.  It's "agak-agak" (estimation). For me is just how you balance the tea colours and the sweetness of the teh tarik. Then again  preparing this special tea is both art and science. There is a certain skill required to stretch the tea back and fro using two containers without spilling a single drop. It is such an impressive art that annually, teh tarik brewers come together to put their skills to test in various competitions. The stretching of the tea actually helps to mix the ingredients better, thus enhancing its exquisite taste. The method also helps to cool the tea down. This is the reason why most Malaysian leave it to the Mamak to prepare this drinks.

Uniquely to prepare teh tarik is both arts and science and to order teh tarik in mamak stall also a science that you need to know. I just came to know about this when I browse through the net to get more information on on teh tarik. Serving it is also an art...we normally serve teh tarik in a clear glass....you know why???? ha..ha..so that you can see the froth...see the teh tarik is so unique and special.

For more on this hot concoction - and instructions on how to order teh tarik or any hot drinks when in Malaysia or Singapore - see the article: Teh Tarik. and also learn the science of ordering teh tarik here.

Anyway if   you like to try the art and science of preparing teh tarik below is the recipe from F&N and do note that there two ways of preparing teh tarik at home, it's either you use loose black tea or tea bags. I normally used loose black tea.  Have fun with the pulling and stretching technique of Malaysia owned Teh Tarik.  I hope the recipe below helps.

Teh Tarik

2 (250 ml) mugs
500ml mixing pot
4 table spoon powdered tea (any type)
2 tea spoon sugar
4 table spoon condensed milk or as desired
boiling water

Methods
1. Put 4 tbsp of powdered tea into a large mixing pot.
2. Add hot water and leave the tea to mix for about five minutes.
3. Sieve and transfer the tea into another glass. Add sugar and milk. Stir well.
4. Take two big glasses, and start pouring the tea from one glass to the other, ensuring that you pull it from as high as you can.
5. Stop when you have achieved the desired foamy texture.
6. Serve in a glass or mug while still hot and foamy.

*Serves 2
Note: Make sure the tea is as thick as possible if you want to achieve the best result. Too little tea will not produce the desired taste and will be too plain and bland.

If you use tea bag for 1 mug use 2 tea bags. The content of tea in tea bag is much lesser then loose tea as such you have to use more tea bags to get the color and the taste
