Ayam Goreng Lengkuas is a recipe originally from Sumatra region. Ayam Goreng Lengkuas is really tasty because it is made from different exotic spices. It is good to serve with nasi putih (plain rice). If you have tried ayam goreng serai, this recipe is more or less the same. For this recipe I've fried the shredded galangal separated to top on to the fried chicken beside the existing spices. Try this is really yummy !!!!

  • 1 whole chicken, cut into 8 pieces
  • 4 tablespoons shredded Galangal - fried to sprinkle on the cooked chicken as garnishing
  • 3 daun salam aka bay leaves
Spice Paste
  • - 3 cloves of Garlic
  • - 5 Shallots
  • - 3 candlenuts
  • - 2 teaspoon fresh Turmeric
  • - 4 stalks lemongrass
  • - 2" galangal
  • - Salt and sugar to taste
  1. Grind or blend the spice paste, use to marinate the chicken together with shredded galangal.
  2. Then take deep fry pan and use to cook the marinated chicken and add some water, salam leaves and  until chicken is cooked and sauce is almost dry. Leave to cool.
  3. Fry the chicken and the spices into deep fry pan with lot of oil until crisp and golden brown. When it's done, use the tissue to absorb the oil. Set aside and serve with the crumb from the spices.  

Resipi ayam goreng ini tidak jauh bezanya dengan resipi ayam goreng serai, cuma dalam resipi ini lengkuas parut dibanyak semasa memerap ayam dan digunakan sebagai taburan atas ayam. Saya lebih gemar menggoreng lengkuas parut ini secara berasingan, ini supaya ia tidak cepat hangus. Resipi Padang ini cukup menyelerakan sesuai dijadikan lauk sampingan
