MONDAY BUKA PUASA MENU - STINGRAY FISH CURRY, CHICKEN GALANGA, FERNSHOOTS KERABU, SAGO GULA MELAKA AND RED BASIL SEED SYRUP DRINKS

Curry is still top on the list when come to breaking fast. Yesterday I made stigray fish curry, Galangal Fried Chicken for my daughter Myraz who does not takes seafood, some fernshoots kerabu for me, I can't live without any vegetables a day, dessert I made an all times favorite Sago Gula Melaka and finally drinks of the day once again I made Basil Sea Red Syrup. All these except for dessert and Kerabu lasted until "Sahor".
 
The fish curry I made a Malaysian Style not the pure Indian, it's Nasi Kandar way. It' delicious, for sahor I just heated the curry and dipped with bread...OMG...it great. A day old curry is fantastic with bread or roti canai. Here's my STINGRAY FISH CURRY RECIPE.
 
INGREDIENTS
  • 300 gm stingray cut into bites pieces
  • 7 lady's fingers
  • 2 fresh tomato quatered
  • 3 stig curry leaves
  • 2 tbsp mixed fenugreek 
  • 1 lime size tamarind - blend with 1/2 cup water
  • 1 cup thick santan
  • 3 cups water
  • 1 onion thinly sliced
  • 5 cloves garlic thinly sliced
  • 2 packet Baba's Fish curry powder - blend with 1/2 cup water
  • 1/2 ladle cooking oil
 PREPARATION

  1. Heat oil in a wok or large, deep frypan. Add paste, curry leaves, mixed fenugreek, and stir over medium-high heat for 1minute until frgarant, add ini sliced onion and garlic continue stirring until soft. Add curry paste and stir for 2-3 minutes until brown and fragrant.
      
  2. Add fish and water, simmer until fish almost done, add coconut milk and tamarind juice.  Reduce heat to medium-low and simmer for 10 minutes or until mixture reduces slightly. Add ;ady's fingers and simmer for 5 minutes or until the it is just cooked. Adjust seasoning with salt and sugar to taste.Finally add in fresh tomato.

    Salam dan SELAMAT PAGI SEMUA, pagi ini bersiaran untuk menu buka puasa semalam. Menu favorite di rumah kari!!! Kali ini saya masak kari ikan pari, geram tenguk ikan pari segar di pasar, saya beli dua potong aje, dirumah cuma ada empat orang aje, anak sulung saya tengah semester break jadi ramai-ramai pakat puasa. Saya buat ayam goreng lengkuas buat Myraz yang tidak makan ikan, kerabu pucuk paku buat diri saya yang tidak boleh hidup tanpa sayur. Untuk pemanis mulut saya buat sago gula Melaka, juga favorite anak-anak, sejukkan dulu difridge, lepas buka dengan kurma yang ini kita cari dulu, pelik ya...bulan puasa kita mulakan dengan dessert dulu. Minumanya pula sekali lagi atas permintaan ramai, buat sirap selasih.  Amin syukur alahamdullilah, tuhan murahkan rezeki. Itulah menu semalam.
