I just made TomYam Noodles for yesterday "buka puasa", some Malay delicacy "serimuka jagung and extra sweet corn I made sweet corn syrup.
TOM YAM NOODLES SOUP
This dish is very easy to make! Tom Yum Noodle is actually very popular due to its intense flavors of sour, spicy and sweet combined with the rice noodle. To prepare the dish, just follow the tom yum soup recipe and add your choice of noodle. Tom yum soup is delicious when made with prawns.I used prawns and some crab sticks.
I chose to use rice vermicelli - bihun noodle as it is my favorite type. It needs to cook in boiling water for about 3-5 minutes before draining. Rice vermicelli cooks shorter than other thicker threads.
You may use any other type of rice noodles such as "wide flat rice noodle - sen yai" or "medium flat rice noodle - sen lek". You can even use egg noodle, I suggest using thin and small threads which goes well with soups.
- 2 quarts chicken broth
- 2 stalks fresh lemongrass, sliced on a bias in 2-inch pieces
- 4 kaffir lime leaves
- 1-inch piece fresh galangal or ginger, sliced
- 2 tablespoons fish sauce, such as nam pla
- 1 1/2 teaspoons sugar
- 3 tbsp tom yam paste
- 7 bird's eye's chili crushed
- 1 (8-ounce) can straw mushrooms, rinsed and halved
- 1 pound large shrimp, peeled with tails on
- 5 crab stick
- 2 limes, juiced
- 2 green onions, sliced
- 1 handful fresh cilantro, chopped
To prepare The Soup
Bring the stock to the boil over medium heat in a saucepan. Add the lemongrass, kaffir lime leaves, galangal, and tom yam paste. Lower the heat to medium-low, cover, and simmer for 15 minutes to let the spices infuse the broth.
Uncover and add the fish sauce, sugar, and mushrooms. Simmer for 5 minutes. Toss in the shrimp and cook for about 8 minutes until they turn pink. Add crab sticks, simmer another few second. Remove from the heat and add the lime juice, green onions, and cilantro. Taste for salt and spices; you should have an equal balance of spicy, salty, and sour. It's a good idea to tell your guest's that the lemongrass and lime leaves are for flavor only and should be avoided when eating the soup.
To prepare The Noodle
- Bring water to boil and add rice vermicelli until cook or approximately 5 minutes.
- Rinse the noodle through cold water and drain.
- Add noodle and tom yum soup in a bowl. Sprinkle some coriander leaves.
Semalam berbuka dengan bihun tom yam. Bukan apa stock barang habis tak sempat hendak membeli-belah, lagi pun keletihan dan mood tidak berapa ada. Saya gunakan stok yang ada aje. Serimuka jagung buat pagi, ini kegemaran anak, balance jagung saya buat sirap bandung. Cukupla sekadar ada.
