SPICED PUMPKIN MUFFINS


After having some good success with my Apple and Carrot Muffins, I wanted to try applying the same technique to other recipes. 
 
I love using pumpkin in muffins because it makes them very moist, much like using applesauce. These muffins were much dense than some typical muffins, perfect for afternoon snacking in addition to breakfast. 

I topped the muffins with some pumpkin seeds. You got to roast the seeds first to make it crunchy. I really love the texture of this muffin. - Yummy!!!!!

Spiced Pumpkin Muffins 
2 cups all purpose flour
1 tsp baking soda¼ tsp baking powder 
¼ tsp salt2 tsp pumpkin pie spice
1/4 tsp nutmeg spice
¾ cup brown sugar
2 tbsp butter, melted
¾ cup milk (low fat or fat free is fine)
½ cup pumpkin puree
1 tsp vanilla extract
1 ½ tsp apple cider vinegar
½ cup raisins (or chocolate chips) - I omitted this
1/2 cup muffin seeds.

  1. Preheat oven to 375F and line 12 muffin cups with paper liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, nutmeg and sugar.
  3. In a medium bowl, whisk together melted butter, milk, pumpkin puree, vanilla extract and apple cider vinegar. Add wet ingredients to flour mixture and stir until almost combined. Spoon evenly into prepared muffin tin and sprinkle pumpkin seeds on top.
  4. Bake for about 15 minutes at 375, or until tester comes out clean.
  5. Remove from tin to cool on a wire rack.
  6. Makes 12 muffins.

Setelah berjaya membuat Apple dan Carrot Muffin, saya menggunakan method yang sama untuk membuat muffin labu ini.  Ketiga-tiga muffin ini sesuai dipadankan dengan kulit kayu manis dan rempah buah pala. Saya menggunakan sukatan yang sama. Tekture muffin ini agak berat tetapi cukup sedap dimakan panas-panas. Saya taburkan biji koci labi yang dipanggang terlebih dahulu. Ini memantapkan lagi rasa muffin ini. Kepada yang membuat business muffin bolehlah mempelbagaikan koleksi muffin anda. Pasti akan mendapat response yang baik dari pelanggan anda.
