AYAM PERAP MADU BERCAJUN / MARINADE CHICKEN WITH HONEY AND CAJUN


I wanted to make the Nasi Kandar, red fried chicken, but I'm running out of paprika, as such I made this lemongrass honey cajun fried chicken. I made the cajun spices of my own after learning to make it through the net. It's hot and spicy. You can even grill it if you wanna have a BBQ party, this recipe meet both deep frying and grilling.

For The Marinade Chicken
1 whole chicken cut into bite size - I usally cut into 12 or 16 pieces
3 lemongrass - blend into wet paste
1" galangal - blend together with lemongras
2" turmeric root - blend together with lemongras and galangal
5 tbsp cajun spices - see below on how to prepare cajun spices or you can use the store bought cajun
salts to taste
1/2 cup thairu or yogurt
3 tbsp honey

Mix all ingredients and marinade overnight. Deep fried till brown.

For the Cajun Spices
  • 1/3 cup kosher salt 
  • 1/4 cup chili powder
  • 1/4 cup paprika
  • 1 Tablespoon onion powder
  • 1 Tablespoon coarsely ground black pepper
  • 1 Tablespoon dried basil
  • 1 Tablespoon dried oregano
  • 1 Tablespoon ground coriander
  • 2 teaspoons dried thyme
  • 1/4 teaspoon cumin
  • 1/4 teaspoon white pepper
Preparation: 
 
Combine salt, chili powder, paprika, onion powder, black pepper, basil, oregano, coriander, cayenne pepper, thyme, cumin, and white pepper until well-mixed.

Place the spice mix in a glass jar and seal tightly. Store in a cool, dark place up to 3 months.

Ini resipi ayam goreng yang rempah cajunya saya buat sendiri. belajar cara membuat cajun ini dari net. Anda boleh aje membeli cajun yang udah siap di mana-mana supermarket tapi kalau nak buat sendiri bolehlah cuba resipi di atas.

Pada asalnya saya hendak buat ayam goreng ala nasi kandar, yang merah-merah gitu tapi kehabisan paprika jadi saya buat resipi ini, saya masukkan sedikit serai, kunyit dan lenguas, campurkan dengan thairu atau yogurt, madu sedikit dan rempah caju. Perap dari subuh dan gorengnya ngam-ngan setengah jam sebelum buka puasa. Panas-panas begini sedap makan dengan nasi.  Ayam ini kalau hendak dipanggang pun boleh juga, resipi ini sesuai juga kalau hendak dijadikan hidangan BBQ.
