This post is special for my SIL - Fiona Duthie in Queensland. I know you missed Malaysian food..and this is JELATAH/ACAR TIMUN or may be we can call this as Cucumber Salad. Its simple to make one...and this best serve with Tomato Rice or even Briyani...See the recipe below and happy trying.
Jelatah/Acar Timun aka Cucumber Salad
2 cucumber peeled and thinly slice
1/2 pineapple thinly slice
1 onion thinly slice
2 green chili thinly slice
2 red chili thinly slice
1/2 cup vinegar
2 tbsp sugar
salts to taste
Mixed the vinegar with sugar and salts
Add to the slice cucumber, pineapple, chili and onion
Combine well and ready to serve
