RAYA LAGI - LONTONG SAYUR PADANG

Lontong has become a popular EID MUBARAK dish among Malaysian, Singaporean, Indonesian and Brunei. Different countries have different ways of preparing lontong. This morning I made Lontong Sayur Padang for breakfast.

Lontong Sayur Padang consists green jackfruit curry, beef rendang, eggs balado (hard boiled eggs in balado sambal), red crackers and balado cassava crakers. 

The different between lontong sayur Padang and lontong sayur Malaysia mainly lies on the "bumbu" / pounded ingredients used, the condiments and vegetables. 

INGREDIENTS
300 g beef / 300 g daging tetel
200 g jackfruits- cooked and drained water / 200 g nangka muda direbus dahulu dan toskan airnya
5  string beans cut 1" length / 5  kacang panjang dipotong 1" panjang
2 packet tempeh - diced / 2 paket tempeh dipotong dadu

2 tofu diced / 2 tahu dipotong dadu
1 long egg plants halved and diced / 1 biji terung panjang dihiris nipis
3 cups coconut milk / 3 cawan santan pekat
1 cup water / 1 cawan air
3 Indonesia bay leaves / 3 helai daun salam
1 lemongrass crushed / 1 batang serai dititik
5 tbsp oil / 5 sdb minyak masak


Pounded Ingredients

11 red chilies / 11  buah cili merah
9 shallots / 9 ulas bawang merah
5 cloves garlic  / 5 ulas bawang putih
2" turmeric root / 2 " kunyit hidup
2" ginger / 2" halia
2" galangal / 2" lengkuas
5 candlenuts / 5 biji buah keras

Blend all ingredients to form wet paste / blend semua bahan untuk dijadikan pes basah.

  1. Stir fry ground ingredients in a large saucepan over medium heat for 1-2 minutes, add salam leaves and lemongrasses, cook for another 1 minutes until fragrant.
  2. Add beef and water. let it cook until beef tender.
  3. Add in cooked jackfruits and other ingredients.
  4. Stir in the coconut milk and boil for another 5-10 minutes or until the all the vegetables  are done.
  5. Serve with lontong, sambal and kerupuks (any kind of kerupuks, either tapioca or shrimp ones).

Walau pun lontong merupakan makanan Nusantara tetapi setiap negeri mempunyai caranya tersendiri. Menariknya tentang lontong sayur Padang ialah nangka muda merupakan bahan utamanya. Cara membuatnya lebih kurang memasak masak lomak nangka tetapi untuk lontong sayur ini saya memasaknya secara menumis.

Lontong Sayur Padang biasanya dimakan bersama rendang, telur berlado dan kerupuk. Biasanya keropok ubi.
