CORNFLAKES COOKIES/ BISKUT CORNFLAKES


A yummy cookie packed with Kellogg’s® All-Bran® cereal, chocolate chips, walnuts and cherry add loads of flavor and texture to these easy, drop cookies.


Cornflakes cookies are just what they sound like: cookies with cornflakes in them. This particular cereal makes a great addition to cookies because it adds a lot of crunch, as well as a flavor and texture that few other ingredients can match.
 
Overall, the cookies have an almost delicate, crumble-in-your-mouth type of texture. The flavor is buttery, and there is quite a bit of crunch to each bite.

The cornflakes must be crushed up before stirring them into the batter. If you’re looking for a variation, you can substitute 1/2 of the cornflakes with chopped and toasted walnuts, or add a little bit of a chocolate drizzle.

INGREDIENTS

125 gm butter/125 gm mentega
½ cup caster sugar/1/2 cawan gula caster
1 egg / 1 biji telur
½ tsp vanilla/1/2 sdt vanilla
1 cup self raising flour /1 cawan tepung naik sendiri
1 cup cornflakes plus 1 ½ cup extra for coating/1 cawan cornflakes campur 1 ½ cawan untuk taburan
½ cup milk chocolate chips /1/2 cawan coklat chip
½ cup chopped walnuts /1/2 cawan walnut cincang
½ cup chopped cherry glaze / ½ cawan ceri cincang

PREPARATIONS

Ø  Pre heat oven to moderate 180 C. Lightly grease oven trays / Panaskan ketuhar pada 180 C dan leserkan dulang pembakar
Ø  In a large bowl using electric mixer, beat butter and sugar until light and fluffy. Beat in egg and vanilla/Pukul mentega dan gula sehingga kembang. Masukkan telur dan vanilla.
Ø Fold flour, 1 cup cornflakes, chocolate chips, walnuts and cherries through./Masukkan tepung, 1 cawan cornflakes, cips, sultanas dan ceri.

Ø Lightly crush remaining cornflakes. Rolls 1 tbsp full of mixture into balls. Toss in cornflakes. Place onto prepared tray 3 cm apart. / Hancurkan baki cornflakes. Golekkan 1 sdb penuh adunan sebesar guli ke dalam cornflakes. Letakkan ke atas dulang pembakar.

Ø  Bake 12-15 minutes until golden. Cool on trays for 5 mins before transferring to a wire rack to cool completely./ bakar selama 12-15 minit atau sehingga kekuningan. Sejukkan dahulu sebelum dialihkan ke wire penyejuk.
