ANZAC COOKIES


When I saw this in Ayu's http://curlybabesatisfaction.blogspot.com/2011/08/biskut-anzac.html, it brought me back down memory lane of my mother in law, a person who taught me to make these cookies. My MIL who married to an Australia air forces is an expert in making these cookies. I haven't seen her for almost 10 years and I haven't made these cookies for the same period until when I saw Ayu's version of ANZAC cookies, intrigued me to bake one batch of it.

A little context  here - An Anzac biscuit is a sweet biscuit popular in Australia and New Zealand, made using rolled oats, flour, desiccated coconut, sugar, butter, golden syrup, bicarbonate of soda and boiling water. These cookies are crispy and easy to prepare. You can even use the dough for chocolate bars or blondies. With creativity you can mix and match the dough with chocolate or PB layer. These cookies are really versatile you can shape it anything you like, can make it thin or thick the taste remain delicious. I love these cookies tasty and really no fuss.

INGREDIENTS


 1 cup flour (all-purpose or whole wheat pastry) / 1 cawan tepung 
1 cup rolled oats / 1 cawan oats
1/2 cup sugar / 1/2 cawan gula
1/2 cup fine grain natural cane sugar OR brown sugar / 1/2 cawan gula perang
1 cup finely shredded non-sweetened coconut / 1 cawan kelapa kering
1/2 teaspoon fine sea salt / 1/2 sdt garam
1/2 cup butter, cut into little cubes / 1/2 cawan mentega
2 tablespoons golden syrup or honey / 2 sdb golden syrup atau madu
1 tablespoon boiling water / 1 sdb air panas

1/2 teaspoon baking soda / 1/2 sdt baking soda


Preheat oven to 325F degrees. Combine the dry ingredients in a large bowl; flour, oats, sugars, and coconut. Mix well.
In a small saucepan over low heat combine the butter syrup (or honey). Stir until melted and remove from heat. In a small bowl whisk together the boiling water and baking soda. Stir it into the butter. Now pour the butter mixture over the big bowl of oats and stir.  Use the ice cream to make the drops or use any mould of your preference. Bake for about 12 minutes or until deeply golden.**

Melihat resipi ini di blog Ayu, teringat saya pada Ibu Mertua ku yang hampir 10 tahun tidak berjumpa. Saya belajar buat cookies ini dari  ibu mertua saya, yang sekarang ini menetap di Queensland. Cookies ini memang cukup terkenal di Australia dan New Zealand, malah nama cookies ini adalah singkatan daripada perkataan AUSTRALIA dan NEW ZEALAND. Cookies ini sebenarnya ada ceritanya, mula diperkenalkan pada zaman Perang Dunia ke II. Cookies dibuat oleh isteri-isteri perajurit untuk dihantar kepada suami di perbatasan. Ceritanya samalah dengan BAKTI di Malaysia. Cookies ini dipilih kerana ianya mudah dan senang ditranportkan.

Memang mudah membuatnya dan tidak banyak ragam, malah tidak perlukan sukatan pun, semua bahan dicampurkan dan dicurahkan mentega cair. Hendak membentukkanya juga mudah, hendak, nipis, hendak tebal, hendak menggunakan acuan semuanya bisa diatur. Cukup mudah. Rasanya pun sedap, melihat pada bahan yang digunakan kita sudah boleh agak rasanya memang sedap. Cukup Ranggup.

Salam umi, bukan rajin, stok bahan kuih raya masih ada, jadi sebelum rosak baik gunakan lagi pun resipi main cebur aje, campur semua bahan dan mentega ikut basah, bakar makan...biskut ini memang ranggup. Kalau umi suka nipis tekan2 kan kalau tebal biarkan gitu aje. Resipi ibu mertua ku.
