STIR FRIED BITTERGOURD SAMBAL/PERIA GORENG SAMBAL

Bittergourds or bitter melon are good dish for diabetic. I am diabetic. I was advised to take a lot of bittergourds. As its name indicated, its bitter and some may not quite like it especially the children. To neutralize it's bitterness I used to prepare my bittergourds with sambal paste.





INGREDIENTS
1 medium size bitter gourds/  1 biji buah peria sederhana sedang
12 pcs fresh shrimp medium size, 1/2 skinned/12 ekor udang hidup sederhana besar, buang kepala dan separa kulit
3 tbsp cooking oil/ 3 sdb minyak masak
The Blended Ingredients
7 fresh red chillies/ 7 biji cili hidup.
7 shallots / 7 ulas bawang merah
3 cloves garlic/ 3 ulas bawang putih
1/2 inch belachan/ 1/2 inch belachan
salts to taste/garam secukup rasa


Blend all and put a side./ Blend  semua bahan dan letakkan sebelah.


METHOD

Cut bittergourd to half (length-wise) and use a spoon to scoop out the seeds. Slice bittergourd thinly./Belah peria dan keluarkan biji dengan menggunakan sudu. Potong jangan terlalu tebal dan jangan terlalu nipis. Rendam dalam air garam.

Heat oil in wok till smoking hot. Reduce heat to low and add blended ingredients. Stir briskly and add  shrimps. Increase heat to high and stir well./ Panaskan minyak dan tumis bahan blend tadi sehingga naik minyak dan garing sedikit.

Sprinkle warm water once in a while to sambal moist and cook until shrimp cook./ Masukkan sedikit air jika agak kering, Masukkan udang dan kacau rata.

Add bittergourd slices and stir fry over high heat for about 2 minutes./ Masukkan peria dan masak lagi dua minit.

Reduce heat, add salt to taste and continue to stir fry. / Kecilkan api, masukkan garam secukup rasa. Kacau sehingga peria masak.

Once bitter gourd is cooked to desired softness of the heat./ Apabila peria dah masak padamkan api.

Dish up and serve with steamed white rice./ Angkat dan hidang. Sedap dimakan bersama nasi panas.

#TIP - Soak cut bitter gourd in salt water to reduce bitterness.

Menu ini adalah menu terbaik buat menggurangkan kadar gula saya.  Pastikan bila memasak jangan dibiarkan peria itu  terlalu masak. Sebaik-baiknya masak sebantar dan biarkan peria itu ranggup.
