SOYA SAUCE FRIED MIHUN/MIHUN GORENG KICAP

Among all the fried Mihun, this goes on the top of the list. Every time I have the urge to fry Mihun, my children will request for Mihun Kicap. Mihun kicap is actuall their "kindergarten menu" teachers will serve them this Mihun Kicap


The Mihun should be a little bit darker but mine was quite pale, I'm running out of thick soya sauce. Anyway as long as the taste was there it is OK. This Mihun goes well with "green chilies jeruk".... really ummpph with the pickles.






INGREDIENTS
1 packet Mihun soak overnight./ 1 packet Mihun rendam semalaman
1/2 cup fresh shrimp medium/ 1/2 cawan udang basah
200 gm beef cook till tender then slice thinly/ 200 gm daging dimasak dan potong nipis-nipis.
5 stalk green mustards cut 2 inch long / 5 batang sawi dipotong 2 inch panjang.
7 garlic chopped/ 7 ulas bawang putih di tumbuk halus
1/2 cup light soya sauce/ 1/2 cawan kicap cair
1/4 cup thick soya sauce/ 1/4 kicap pekat
pepper and salt to taste/lada sulah dan garam secukup rasa
2 cups beef stock from the cook beef / 2 cawan stok daging dari air rebusan daging.
Fish ball/fish cake (optional)/ Bebola ikan (pilihan)
7 tbsp oil/ 7 sdb minyak
sesame oil/ minyak bijan
METHOD:

  1. Heat up a large wok, then heat up small amount of cooking oil./ Panaskan minyak di dalam kuali.
  2. Stir-fry garlic till garlic is fragrant./ Tumis bawang putih sehingga naik baunya.
  3. Add and shrimp and beef. Cook for about 5 minutes. Add in beef stalk. Add light soya sauce, thick soya sauce and pepper./ Masukkan udang hidup, hiris daging. Masak lima 5 minit, kemudian masukkan stok daging dari air  rebusan daging tadi.  Masukan kicap cair, kicap pekat dan lada sulah
  4. Add the vegetables stalk./ Masukkan batang sawi.
  5. Add the Mihun and mix well with the ingredients until mostly dry.  Lastly add in the fresh vegetables./ Masukkan Mihun dan kacau rata. Akhir sekali masukan sawi dan kacau sehingga semua sebati dan rata.
  6. Drizzle sesame oil on top, stir to mix well, and turn off the fire.  / Titikan beberapa titik minyak bijan di atas Mihun yang digoreng tadi.
  7. Serve on platter and garnish with "bawang goreng"/ Hidang bersama bawang goreng dan cili jeruk

Bagi veteran macam saya Mihun ini agak muak melainkan kalau digandingkan dengan cili jeruk. Anak-anak memang suka rasanya lebih-lebih lagi kalau dimeriahkan dengan bebola ikan.
