KUIH KERIA/THE MALAYSIA DOUGHNUT

Kuih Keria Keledek Orange
I am posting my Ramadan kuih again, this time is Kuih Keria or the Malaysian version of doughnut. Kuih Keria is a combination of flour and steamed sweet potato flesh, shaped into rings and deep fried. Different from the modern doughnut Kuih Keria is coated in a sugar glaze that’s left to crystallize. It's crunchy outside and soft inside. Some called it kuih gelang, may be becauce it resembles the bangles. For variation you can try using yam. It is very important when preparing kuih keria, ensure that you do not use too much flour. It will loose the sweetness of potatoes and doughnut texture will definitely be hard. This kuih is awesome if taken while it is HOT.

INGREDIENTS
500g yellow or orange sweet potatoes, peeled and cubed/ 500 gm keledek direbus dan dilecek.
1cup self rising flour/ 1 cawan tepung naik sendiri
1/2 tsp baking powder / 1/2 sdt baking powder
Oil for deep frying/minyak untuk menggoreng 
5 tbsp sugar for crystalizing/ 5 sdb gula untuk buat salutan
2 tbsp water for cystalizing/ 2 sdb air untuk buat salutan
METHOD
  1. Placed the mashed sweet potatoes in a mixing bowl. Combine with self raising flour and baking powder. Knead into a soft dough./ Campurkan keledek lecek dengan baking powder dan tepung naik sendiri.
  2. Divide dough into a few pieces. Dust hands lightly with flour and roll each dough piece into a round blall. Flatten it slightly with the back of your hand until it's about 7cm large. Slowly using your finger to poke a hol.e through and fashion dough into a ring. Set aside. Repeat with the rest of the dough./ Bahagikan adunan kepada beberapa bahagian dan bentukan seperti donut
  3. Heat oil in a wok over medium-high fire. When smoking hot, add dough rings in batches. Deep fry for 5-8 mins or until golden brown. Remove and drain on paper towel. / Panaskan minyak dan goreng sehingga kekuningan. Angkat, tos dan ketepikan.
For Coating
  1. Heat frying pan without oil, add in water then sugar./ Panaskan kuali dan masukkan gula dan air
  2. Cook until sugar dissolved and transform to white colour./ Masak hingga gula berubah warna menjadi putih.
  3. Deep in all the sweet potatoes donut at one go and coat it well until all covered with white sugar/ Masukkan semua kuih keria yang digoreng tadi dan ratakan sehingga semua kuih dibaluti gula.

Kuih yang tidak perlu perkenalan, menjadi kegemaran masyarakt Malaysia. Ada yang memanggilnya Kuih Gelang kerana menyerupai gelang. Enak dimakan, Ranggup diluar lembut di dalam. Cara salutannya boleh divariasikan. Kalau ada yang takut untuk menggunakan cara tradisi boleh digunakan dengan moden, iaitu menyalut kuih ini dengan gula kaster ala...ala donut moden.  Boleh juga dibuat dengan ubi keladi, tetapi warnanya mungkin agak kurang menarik. Apa pun semuanya terpulang kepada citarasa empunya badan.

this is my hubby's favourite!!..
kalau buat at least 1kg sweet potatoes..
urs ada letak baking powder ya..i guess to give it more gebu bila digigit....boleh cuba next time.
