SAMBAL TUMIS SOTONG

For Nasi Lemak, I usually used the dried  cuttle fish. You can get the ready soak from the market or soak it overnight yourself.  






INGREDIENTS
2 pcs cuttlefish cleaned and cut into pieces each/2 keping sotong rendam potong 2 inch panjang. 
1 onion cut into ring/ 1 biji mbawang besar di potong bulat
3/4 cup cooking oil/ 3/4 cawan minyak masak
3 tbsp tamarind juice/ 3 sdb air asam jawa
2 tbsp sugar/  2sdb gula
salt to taste/ garam secukup rasa.


Chilie Paste
1 handful dried chillies / 1 genggam cili kering
11 shallots/ 11 ulas bawang merah
1 inch belachan/shrimp paste/ 1 inch belachan

METHOD

Grind chilie paste ingredients and put a side./ Kisar bahan-bahan kisar dan letak sebelah.

Heat up the oil in the wok (med high) and put the chili paste in. Keep stirring for about 10min until fragrance./ Panaskan minyak dan tumis bahan kisar sehingga naik minyak dan garing.

Add sugar. Continue stirring for another 4-5min. Add in cuttlefish and cook for  for another 20 minutes. Add water is the sambal dried. Add salts and tamarind water to taste./ Masukkan gula dan goreng lagi  4-5 minit. Masukkan air jina perlu. Masukkan garam secukup rasa. Masukkan sotong dan air asam jawa. Masak sehingga sotong lembut.

Add in the sliced onion and simmer for another 2-3min. /Akhir sekali masukkan masukkan bawang besar yang dipotong bulat. Masak 2-3 minit dan padamkan api.

Remove from heat and serve.

Rahsia sedap sambal tumis ialah tumis bahan giling sehingga betul-betul garing. Pilihan cili kering juga penting, pastikan anda membeli yang sederhana pedas. Begitu juga dengan sotong rendam, pilih yang dikhaskan untuk sambal tumis, bukan sotong rendam untuk sotong kangkong. Nampak sama tapi rasanya berbeza.
