PULUT SERUNDING VS PULUT PANGGANG VS PULUT UDANG



Pulut Serunding


Pulut Serunding is a glutinous rice dish serve with "serunding" - floss. Difficult to find this dish this day so if you happen to crave for it then you have to make it. I did this during the fasting month but it end up I have to finish it by myself. The children don't quite fancy this, may be the millennium children don't like "pulut", anyway this dish is delicious. Good for breakfast and tea.


The Pulut
4 cups glutinous rice- soak minimum 4 hour/4 cawan pulut- direndam sekurang-kurangnya 4 jam
4 cups coconut milk/ 4 cawan santan
pinch of salts/ garam secukup rasa.
1/2 cup cooking oil/ 1/2 cawan minyak masak
salts and sugar to taste/garam dan gula secukup rasa.

  • Put the rice, pandan leaves, salt and add coconut milk inside baking tray or pot./ Basuh beras pulut, letak daun pandan, beras pulut santan dan garam dalam satu loyang lalu kukus.
  • Steam over rapidly boiling water for 30 minutes till the rice split open and soft. / Kukus selama 30 minit atau sehingga pulut masak.
  • Remove cooked glutinous rice from the steamer and put aside to cool./ Angkat dan sejukkan.
  • Take 1 scoop of pulut, kneading well to form of smooth pliable dough, like a small ping pong ball and roll in your palms/ Ambil sesenduk kecil dan bulatkan pulut.
  • Roll into serunding and covered well then serve./ Oles dalam serunding dan leperkan pultut.
The Serunding/Floss

4 cups grated coconut/ 4 cawan kelapa parut

1/2 cup fresh shrimp chopped/ 1/2 cawan udang hidup cincang
1 turmeric leaf/ 1 helai daun kunyit

The Serunding paste
7 shallots/ 7 ulas bawang merah
3 cloves garlic/ 3 ulas bawang putih
1 lemon grass/ 1 batang serai
1/4 inch galangal/ 1/4 lengkuas
15 dried chili/ 15 cili kering
1 inch turmeric root/ 1 inch kunyit hidup
3 tbsp dried shrimp/ 3 sdb udang kering


Blend all ingredients./ Blend semua bahan menjadi pes.
  1.  Heat oil and fry blended ingredients till fragrance arise./Panaskan minyak dan tumis bahan blend sehingga naik baunya
  2. Add fresh shrimps and mixed well, fry till the shrimps cooked./ Masukkan udang dan kacau rata.
  3. Add salt, sugar and all the leaves./ Masukkan garam dan gula secukup rasa. Juga masukkan daun kunyiy bagi menaikkan harumanya.
  4. Constantly mixed all the ingredients, last and not least add grated coconut./ Kacau jangan sampai hangit
  5. Fried over low heat and till dry. Put aside to cool./ Masukkan kelapa parut dan terus kacau di atas api sederhana. Sejukkan sebelum dibungkus atau dilettakan ke atas pulut.
With the same ingredient you can transform your pulut serunding to pulut udang. All you need to do is to wrap the pulut with banana leaf, put the filling there goes a another version of pulut - PULUT UDANG/PULUT PANGGANG. The choice is yours as how you what your pulut serunding to be.



Pulut Udang/Pulut Panggang

Pulut Serunding dinamakan apabila ianya dihidang dengan meletakkan serunding di atas pulut, tetapi apabila pulut ini dibalut dengan daun pisang dan diletakkan inti dan dipanggang pulut ini dinamakan PULUT PANGGANG atau PULUT UDANG. Menariknya kedua-dua menggunakan bahan yang sama cuma methodny sahaja berlainan. Apapun memang sedap dan tak mudah jemu.
