CUSTARD MARBLE PUDDING

I found  this recipe by Chef Azli Razali in FoodDigest. This pudding reminded me of my late mother. She used to make this pudding but with different version and varieties of colour. She called the pudding, Pudding Malaysia, may be the colours represent the multi racial in Malaysia. I have been trying to get hold of the recipe but could'nt find one till I saw this recipe from Chef Azli which resemble my mom's Pudding Malaysia.

It's a simple pudding recipe but I being a novice in making pudding, I am a little bit careful with my selections. Alhamdulillah, it turned out perfect, not only presentable, it's also delicious. If you love the taste of chocolate, this pudding is for you.

INGREDIENTS
Ingredients A
30 g strip agar-agar / 30 g agar-agar tali
1 1/2 cup sugar / 1 1/2 cawan gula
8 cups water / 8 cawan air

Ingredient B
1 can condensed milk / 1 tin susu pekat
4 nos egg yolk / 4 biji kuning telur
250 g butter / 250 g mentega
2 tbsp cornflour / 2 sdb tepung jagung
2 tbsp cocoa powder / 3 sdb serbuk koko

PREPARATION

  1. Pour ingredients A into a saucepan and stir cook until sugar and agar-agar dissolved./ Masukkan bahan A dalam periuk dan masak sehingga gula dan agar-agar hancur.
  2. Place ingredients B except cocoa powder into a bowl and mix well. Pour into agar-agar mixture and cook until thicken./ Masukkan bahan B ke dalam mangkuk dan kacau rata. Curahkan bahan B ke dalam bahan A.
  3. Mix half of the boiled agar-agar with cocoa powder./ Bahagi kepada 2 bahagian, satu warna asal, dan satu lagi dicampurkan dengan serbuk koko.
  4. Scope the into a mold making a stripe with yellow and cocoa mixture until complete. Chill before serving / Sendukkan adunan ke dalam acuan berselang seli seperti membuat kek marble sehingga habis. Sejukkan baru dihidang.

Saya ni bab-bab pudding ni memang agak kureng sedikit. Selalu takut nak buat, takut tak jadi, pernah beberapa kali cuba tapi hampeh... tekak ni teringin sangat nak makan pudding yang arwah umi selalu buat...Pudding Malaysia, yang berwarna-warni tetapi tak ada resipinya pula. Tapi entah macam mana ketika keluar makan dengan kawan-kawan terpandang satu majalah The FoodDigest, belik-belik majalah tu terpandang resipi dai Chef Azli Razali, berkenan pula, nampak seakan-akan Pudding Malaysia arwah Umi, saya pun beli dan balik terus test di PATYSKITCHEN. Ummmp... alhamdulilah kali ini nasib menyebelahi saya. Pudding berhasil dengan sempurna. Rasa sama macam pudding arwah umi dan bagi yang mengemari pudding dan suka perisa coklat bolehla cuba resipi ini.

Thank you for posting this recipe. It is my childhood puding too. my aunt used to made it on sunday (the 1980 era). I hardly find it now. So, finding this blog is like a miracle for long lost puding. May Allah give you reward in return.
