SAVOURY STEAM PUMPKIN CAKE / KUIH LABU KUKUS BERLAUK

Savoury Steam Pumpkin Cake  is a popular local savoury kuih made from  mashed pumpkin steamed with rice flour. This kuih is a favourite among the Chinese. The preparation and cooking method is the same as the Steam Yam Cake. Serves best with chili sauce and a perfect tea time or breakfast menu. I love this kuih and I feel that the combination of minced chicken,dried mushroom and grounded dried shrimps gave a unique taste to this kuih. It is not difficult to prepare this kuih and the kuih looks attractive with the colourful garnishing.






INGREDIENTS
For the batter
2 cups rice flour/ 2 cawan tepung beras
1/2 cup cornflour / 1/2 cawan tepung jagung
1 cup mashed pumpkin / 1 cawan labu yang dilecek
3.5 cups coconut milk / 3.5 cawan santan
salts to taste and pepper /garam secukup rasa dan lada sulah

Mix all ingredients and leave aside. / Campurkan semua bahan dan letakkan sebelah.

For the filling
2 cups minced chicken / 2 cawan daging ayam kisar
5 dried mushroom - slice thinly / 5 cendawan kering
1 large onion - chopped / 1 biji bawang besar dicincang
3 cloves garlic - chopped / 3 ulas bawang putih dicincang
1" ginger - chopped / 1" halia dicincang halus
3 tbsp oil / 3 sdb minyak masak
3 tbsp light soya sauce/ 3 sdb kicap cair
1 tbsp oyster sauce / 1 sdb sos tiram
1 tbsp sesame oil / 1 sdb minyak bijan

Heat up oil and saute onion till fragrant and brown. Add in garlic, ginger, minced meat and dried mushroom. Add soya sauce, oyster sauce and sesame oil. Cook until chicken are done. Remove from heat and leave cool for a while. Approximately 10 minutes./ Panaskan minyak dan tumiskan bawang besar hingga naik bau dan kekuningan. Masukkan bawang putih, halia, cendawan kering dan daging kisar. Masukkan bahan kicap cair, sos tiram dan minyak minyak. Masak sehingga daging benar-benar masak. Padamkan api dan biarkan sejuk sebentar.

Add the filling to the batter mixture and heat up until batter slighly thicken. Pour batter into tray and steam for 20 minutes. Leave to cool before garnishing. / Masukkan bahan inti tadi ke dalam bahan bancuhan tepung dan masak atas api perlahan sehingga agak pekat sedikit dan tuangkan ke dalam loyang dan kukus selama 20 minit.

For Garnishing
1/2 cup pounded peanut / 1/2 cawan kacang tanah tumbuk
1/2 cup dried shrimp - fried and grind / 1/2 cawan udang kering yang digoreng dan ditumbuk kisar halus
2 red chili slice thinly / 2 biji cili merah dimayang halus
2  stalk spring onion chopped / 2 tangkai daun bawang dimayang halus
2 hard boiled eggs - slice / 2 biji telur rebus - dibelah bulat
Fried shallot / Bawang goreng

Sprinkle all garnishing ingredients on top of cake / Taburkan bahan-bahan hiasan ke atas kuih yang sudah masak.

Serve hot with chili sauce / Hidang panas-panas bersama sos cili.

Kuih Labu Berlauk sebenarnya ada persamaan dengan Kuih Talam Keladi berlauk. Bahan yang digunakan dan cara penyediaannya adalah sama. Kuih ini lebih popular dikalangan masyarakat China. Kombinasi antara daging kisar, cendawan kering dan taburan udang kering yang digoreng terlebih dahulu memberikan keunikan pada rasa kuih ini. amat sesuai dihidang sebagai minuman petang mahupun sarapan pagi.  Lebih hebat kalau dihidang panas-panas bersama sos cili.  Kuih ini merupakan favorite saya, tetapi anak-anak agak kurang mengemarinya.
