CHICKEN NASI KANDAR / AYAM NASI KANDAR


If you are a BIG FAN of Nasi Kandar, then you should try this. It's fantastic. I made this dish   yesterday, it's aroma really kills you. This dish is best with beef, but I used chicken since my children don't really fancy beef. I am giving a strong recommendation on this, try this you will never regret  and your family will sure to love it. So here's the recipe :-

INGREDIENTS
Recipe is for 1/2 chicken or for 1 kg beef.

1/2 chicken cut into 8 pieces / 1/2 ekor ayam potong 8
1 tbsp turmeric powder / 1 sdb serbuk kunyit
2 tsp salts / 2 sdt garam
sufficient oil for deep frying / minyak secukupnya untuk menggoreng

  1. clean chicken and coat the chicken with turmeric and salts. Marinade and leave aside for 30 miniutes. / Bersihkan ayam dan lumurkan ayam dengan garam dan serbuk kunyit. Perapkan selama 30 minit.
  2. Deep fried the chicken till cooked and golden brown. Remove, drain and leave aside. / Goreng ayam sehingga masak dan kekuningan. Angkat, tos dan letak sebelah.

Other Ingredients
2 tomatoes quartered / 2 biji tomato belah empat
1 screwpine leave quartered / 1 helai daun pandan potong 4
3 string curry leave / 3 tangkai daun kari
2 string coriande leave  cut into 4 strips/ 2 tangkai daun ketumbar di potong 4 
1 cinnamon stick / 1 batang kulit kayu manis
3 anise star / 3 kuntum bunga lawang
5 cardamon / 5 biji buah pelaga
2 large onion slice thinly / 2 biji bawang besar hiris nipis-nipis
1/2 cup dark soya sauce / 1/2 cawan kicap cair
1/4 cup tomato sauce - I used tomato puree / 1/4 cawan sos tomato
2 cups water / 2 cawan air 
1 tsp chicken bouillon / 1 sdt serbuk pati ayam
2 tbsp palm sugar / 2 sdb gula merah
1/2 cup oil / 1/2 cawan minyak masak
2 packets beef curry powder / 2 paket serbuk kari
Ingredients to be Ground
3 cloves garlic / 3 ulas bawang putih
1 onion / 1 biji bawang besar
2" ginger / 2" halia.
2 tbsp kas-kas / 2 sdb kas-kas
Ground all and mixed with curry powder. You can used 1/2 cup water to form this wet paste /  Kisar semua bahan dan campur dengan serbuk kari. Guna 1/2 cawan air untuk jadikan pes basah dan letak sebelah.

PREPARATIONS
  1. Heat up oil and saute the slice onions until brown. Add in screwpine leaf, curry leave, cinnamon, anise star and cardamon. Stir fried until fragrant./ Panaskan minyak dan tumiskan bawang besar. Masukkan daun pandan, daun kari, kulit kayu manis, bunga lawang dan buah pelaga. Kacau sehingga bawang kekuningan.
  2. Add in the curry paste and constantly stir until mixture well blended and fragrant. Add in water. Simmer for a while at least 15 minutes. Add in thick soya sauce, tomato sauce, sugar, bouillon and salts to taste./ Masukkan pes rempah kari dan bahan kisar tadi. Kacau sehingga garing dan naik baunya. Sekurang-kuranya 15 minit di atas api. Masukkan air dan renehkan sebentar. Masukkan kicap pekat sos tomato, serbuk pati ayam, gula dan garam secukup rasa.
  3. Let it thicken for a while and add in the fried chicken. Simmer until gravy thicken and finally add in fresh tomato and coriander leaf. /Biarkan kuah pekat sebentar baru masukkan ayam goreng tadi. Biarkan di atas api sehingga naik minyak baru masukkan buah tomato dan daun ketumbar. Sedia dihidang.

Kalau anda atau keluarga anda peminat Nasi Kandar maka anda perlu mencuba resipi ini. Biasanya resipi ini dipanggil "kuah daging hitam" sebab warnanya kehitaman. Inilah penyedap nasi kandar dan akan dicampurkan denga kuah-kuah lain seprti kari dan kurma. Memang terangkat kalau memakannya. Sebenarnya tidak susah menyediakannya. Resipi ini boleh digunakan untuk ayam mahupun daging, sebaik-baiknya ianya lebih sedap kalau digunakan daging.

Kepekatan kuah bergantung kepada citarasa masing-masing, anda boleh tambah air jika nak muai dan cair. Cubalah pasti akan mendapat rating tinggi dari keluarga. Masakan ini memang cukup sedap dan semerbak harum, jika memasak pasti akan menganggu gugat tertangga dengan aromanya yang menakjutkan. SELAMAT MENCUBA

Kas-kas is a kind of poppy seed..this is optional..you can skip it if you one. See mot nasi kandar restaurant love to put kas2...it enhance the taste..you can find kas2 in Indian or mamak shop. Best is to get at Mydin
