ROJAK BUAH - MALAYSIAN FRUITS SALAD




This recipe need no introductory, it's well known in Malaysia. Ingredients using tropical fruits and vegetables e.g. young mango, young papaya, pineapples, cucumber, sengkuang and mixed with a thick black pungent sauce made from prawns with crushed peanuts scattered over it. There are many version of Rojak Buah, the Malay, the Chinese and the Nyonya. The recipe i'm sharing today is adapted from Malaysiandelicacies.blogspot, recipe from Chef Florence Tan.



Fruits used:

Pineapple/nenas

Green Mango or semi ripe mango/ Mangga muda

Jicama/Sengkuang

Cucumber/timun
Guava/ Jambu batu
Soft Guava/ Jambu air
Ambarella/Ambra
Star fruits/belimbing


Sauce Ingredients:
1 anchovies stock cube(dissolve with a bit of water)
1 in roasted shrimp paste
2 ½ tbsp thick soy sauce
½ cup sugar or brown sugar
250gm palm sugar/gula melaka
2 red chilies(if want more spicy can add bird’s eye chilies)
2 tbsp tamarind juice
2 tbsp calamansi lime juice/or normal lime juice
½ cup roasted groundnuts(grind to a paste)
1 ¼ cups fried plain flour
1 tbsp sesame seeds (roasted)
Salt to taste

Toppings
1 cup roasted groundnuts /peanuts (ground coarsely)


Directions
Pound red chilies and roasted shrimp paste .Keep aside.In low heat, mix in 1 cup water with palm sugar.Let it cook until palm sugar melts.In between add in the sugar/brown sugar.Once the syrup thicken slightly, close fire. Slowly add in the palm sugar syrup into the fried plain flour. Stir quickly until the syrup is mixed well with the flour.Sieve the mixture.Add in soy sauce, pounded chili and shrimp paste , grounded peanuts, tamarind juice, lime juice , anchovies mixture and salt to taste . Give a good stir and finally add in sesame seeds .Stir again.

To serve:
In a bowl , add in cut fruits and vegetable, add in the sauce and give it a stir so that the sauce is well combine with all the ingredients, garnish with a generous amount of coarsely pounded peanuts or roasted groundnuts.

Rojak buah tak perlu pengenalan, bak kata Allahyarham P.Ramlee, se-entero Malaysia, kenal dan suka. Baik Melayu, Cina dan India. Boleh dipanggil Salad Buah Malaysia. Ini kalau makan waktu petang, duduk dibawah pohon rendang sambil berborak-borak isu semasa, perghhh..... memang syok. Rojak buah ni kalau versi Chinese terutama di sebelah Pulau Pinang ditambahkan pula sotong basah, keropok udang dan cakoi yang dikeringkan.....Lagi terangkat dibuatnya.

Untuk kuahnya terdapat beberapa versi yang boleh diikuti. Saya lebih gemar resipi yang disediakan oleh Chef Florence Tan, ala-ala Nyonya style. Rojak ini tidak ada ertinya tanpa "petis". Petis atau otak udang memainkan peranan penting dalam menyediakan kuah rojak ini. So sebagai ganti kuih Kosui Kentang yang tak jadi tu terimalah MALAYSIA FRUITS SALAD aka Rojak Buah.

Byk yang nur dah tertinggal ni...nak kena tengok satu persatu resipi akak...

rojak buah tu sedap kak...my hubby suker rojak buah2an..nur pulak suka yang ada tauhu bakar & char kway.
