MINI STRAWBERRY TARTLETS


These fruits tartlets are perfect for party or cocktail party. It's cute and presentable. For this recipe I used cream frosting instead of the normal custard filling. You can use any fruits of your preference. Some suggestions are kiwi, lychee, logan, grapes or even peaches. It's simple, beautiful and tasty. To get a crunchy base I added some blended cornflakes.


Tart Shell:
125 gm low protein flour / 125 gm tepung rendah protein
70 gm butter/ 70 gm mentega
50 gm sugar / 50 gm gula halus
1 egg yolk / 1 kuning telur
50 gm blended cornflakes / 50 gm cornflakes kisar
some water / sedikit air


Directions:
Mix flour and salt in a mixing bowl. Add butter and cornflakes. Add egg and water make into soft dough. (if the dough is too soft add more flour, if the dough is too hard add in some water.   Pat pastry into a rough ball, wrap in plastic and refrigerate for at least 30 minutes./Campurkan tepung, garam dalam mangkuk adunan. Gaul rata. Masukan mentega dan cornflakes. Gaul lagi. Kemudian masukkan telur dan air, uli sehingga menjadi doh lembut. (kalau keras tambah air air dan kalau lembut masukkan tepung) Masukkan doh yang diuli masukkan kedalam plastik dan sejukkan ke dalam fridge selama 30 minit.

Roll out dough into 5 -6 mm thick,  and press firmly into the tart mold.. Weight with dried beans. Bake at 350 for about 10-15 minutes or until firm and golden brown./ Ulikan doh setebal 5 -6 mm dan tekankan ke dalam acuan tarts. Masukkan kekacang dan bakar pada 350  selama 10 -15 minit.


This is a YUMMY whipped cream frosting that is very stable and does not melt at room temperature unlike many standard whipped cream frostings. It also makes a GREAT dip for fresh fruit -- not too sweet, just right! This recipe is GREAT for a stand mixer but will work with any good mixer."

Ingredients

  • 1 (8 ounce) package reduced-fat cream cheese, softened/ 8 oz krim keju
  • 1/2 cup white sugar / 1/2 cawan gula icing
  • 1 teaspoon vanilla extract / 1 sdt vanila
  • 1/2 teaspoon almond extract / 1/2 sdt esen badam
  • 2 cups heavy cream / 2 cawan krim pekat

Directions

  1. Combine the cream cheese, sugar, vanilla extract and almond extract in a large mixing bowl or the bowl of a stand mixer. Fit the mixer with the whisk attachment and mix on medium speed until smooth. While the mixture is still whipping, slowly pour in the heavy cream. Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak./ Satukan krim keju, gula, vanila dan esen badam dalam mangkuk besar atau mixer. Pukul sehingga gebu, masukkan krim dan terus pukul sehingga adunan betul-betul gebu.

Sajian yang sesuai untuk majlis dan koktail, comel dan cantik. Saya memang suka membuatnya kerana biasanya ia menambahkan seri pada sajian. Buah-buahan yang boleh digunakan ialah kiwi,peach, anggur, lychee dan logan. Untuk intinya boleh digunakan krim kastad ataupun whip krim. Bergantung kepada citarasa masing-masing dan untuk memastikan lapisan bawahnya terus kekal ranggup saya campurkan adunan bawah dengan cornflakes.
