Good Morning All, it's almost approaching lunch and I have to do this fast. We have this pulut sambal for breakfast today. Thought it is not advisable to have pulut, (the old folk believe that pulut could put you to sleep easily ha..haa) I made it today coz I have some outside work to be done, the children have their normal toast and cereals.I wrapped the pulut with banana leaves and top it with fish floss - serunding ikan. This is how the northern region folk eat their pulut. It's awesome!!! I LIKEEE.......
For The Glutinuous Rice
50 gm. glutinous rice flour - soak overnight100 ml. thick coconut milk
1 tsp. salt
- Soak glutinous rice overnight.
- Drain the soaked plain glutinous rice and steam it over high heat till cooked. Remove from steamer, mix with coconut milk and salt while still hot.
For The Sambal1 kg ikan kembung - cooked and shredded like ding laksa gravy
20 dried chilies
3 cloves garlic
3 stalks lemongrass
1 " galangal
2 cups coconut milk
1/2 cup of water
salts and sugar to taste
1 small tamarind pulp
pinch of chicken bouillon
- Blend all ingredients except the fish and tamarind pulps.
- Simmer coconut milk, add blended ingredients, salts and sugar to taste. Add shredded fish and 1/2 cup water. Constantly stir until mixture dried like serunding. Top this serunding on the glutinous rice.
You can keep the serunding in air tight container and can eat it with bread or even rice. Can also use this serunding for bun.
Salam dan selamat pagi semua, menu untuk breakfast pagi ini ialah Pulut Sambal. Menu ini memangterkenal di sebelah utara tanah air terutama di Kedah dan Perlis. Pulut dibalut dan diletakkan serunding ikan. Memang sedap, sekali makan pasti nak lagi. Cara balutan pulut sambal ini adalah seperti di atas.
