SUNDAY BREAKFAST - CARAMALIZED ONION FRITATTA AND MEE SANGUL

Happy Sunday everyone!!!, Sunday is back again and today I plan to take my girls to the library. Our breakfast today are simple Caramalized Onion Tuna, Broccoli, Tomato Fritatta and Mee Sanggul. Simple but heavy to cover lunch, so let's call it brunch, after all we have our breakfast at 11 am. When I did my blog walking and looking for breakfast idea, I came across, fritatta, quite curious and then a few months ago I kept finding recipes for fritatta, and I noticed that it was just like an ordinary omelette. Ya it is an Italian Omelette. I was curious enough to make fritatta.

After a thorough search on the internet, I tweaked a few recipes into one, as I often do, and today I gave it a try. What can I say? These delicious fritatta are now part of my list of Sunday breakfast treats. They are tasty, light and fluffy. I love them with a french loaf.

Caramelized Onion, Tuna, Broccoli  and Tomato Fritatta

1 teaspoon butter / 1 sdt mentega
1 large sweet onion, thinly sliced and separated into rings/ 1 biji bawang besar potong bulat
1/2 teaspoon chopped fresh or 1/8 teaspoon dried thyme leaves/ 1 sdt rempah thyme
7 large eggs / 3 biji telur
5 large egg whites / 3 biji putih telur
1/4 teaspoon salt / 1/4 sudu teh garam
1/8 teaspoon ground black pepper / 1/8 sdt serbuk lada hitam
1/4 teaspoon hot sauce (such as Tabasco) / 1/4 sdt sos tabasco
1/4 cup frozen chopped broccoli, thawed and squeezed dry 1/4 cawan brokoli yang dipotong ikut bunga
1 can tuna / 1 tin tuna dicarik-carik
2 fresh tomato slice into ring / 2 biji tomato dipotong bulat
3/4 cup shredded  Cheddar cheese / 3/4 cawan keju cheddar
  1. Melt butter in a large nonstick skillet over medium heat. Add onion; cover and cook 3 minutes. Uncover, season with thyme and sauté an additional 10 minutes or until golden brown. Remove from pan and let cool./ Panaskan minyak dan tumis bawang besar selama 3 minit, masukkan rempah thyme dan tumis lagi 10 minit sehingga kekuningan dan garing. Angkat dan sejukkan.
  2. Preheat broiler. / panaskan kuali
  3. Whisk together eggs, egg whites, salt, pepper and hot sauce in a large bowl. Stir in caramelized onions, broccoli, tuna, tomato and half of cheese./ Pukul telur, putih telur, garam, lada, dan sos tabasco dalam mangkok besar. Masukkan bawang goreng tadi, brokoli, tuna, tomato dan separuh cheese.
  4. Coat a small nonstick skillet or omelet pan with cooking spray; place over medium-high heat. Pour in egg mixture. Reduce heat to medium-low; cook 3 minutes or until bottom is lightly browned, lifting edges and tilting skillet as eggs cook to allow uncooked portion to flow underneath cooked portion./ Panaskan minyak dan masukkan bancuhan telur tadi seperti membuat telur dadar. Perlahankan api dan masak hingga telur masak.
  5. Wrap handle of pan with foil. Broil frittata 2 minutes or until top is almost set. Sprinkle with remaining cheese and broil 2 additional minutes or until cheese is melted./ Masak lagi 2 minit dan apabila hampir masak taburkan separuh lagi keju sehingga keju cair.
**Tip: This simple frittata makes easy use of eggs you probably already have on hand. For those who prefer a no-yolk version, simply use 1 1/4 cups egg substitute in place of the eggs and egg whites.
