MEE GORENG MAMAK / MAMAK STYLE FRIED EGG NOODLES


I am a BIG fan of Mee Goreng Mamak. The best Mee Goreng Mamak that I've tasted was at Bangkok Lane and Esplanade, Penang..Goosh....so..so yummy that sweat you all the way..hot spicy and really finger licking good.  If you need a double dose on this fried mee add some "sambal sotong" (cuttlefish sambal)OMG it is heavenly delicious.

Mamak in this context refers to an Indian-Muslim, Indian-Muslim are damn good in their cooking and they control almost 50% of the restuarants in Penang.The actual mamak mee goreng has chicken breast, dried tofu, slice boiled potatoes, prawn fritters and eggs in it. This mee is, usually complemented with a dash of lime juice, giving it that tangy surprise which precedes the spiciness and fried to absolute perfection…now that’s simply irresistible! 

Ingredients:

1 packet yellow noodle  / 1 packet mee kuning
200 g shrimps shelled and devine / 200 g udang hidup dibuang kulit
2 tofu fried and slice / 2 keping tofu digorengdan hiris.
3 stalk green mustard, cut into 1" length /3 batang sawi hijau dipotong
1 handful bean sprouts / 1 genggam taugeh3 large eggs oil / 3 biji telur direbus
3 prawn fritters slice / 3 keping cucur udang dihiris nipis
3 boiled potatoes slice / 3 biji kentang direbus dan dihiris
5 tbsp cooking oil / 5 sdb minyak masak
2 red chilies thinly slice / 2 biji cili memrah dihiris nipis
2 strig green onion thinly slice / 2 tangkai daun bawang dihiris nipis
some fried shallots for garnishing / bawang goreng untuk hiasan
3 tbsp ground peanuts for garnishing / 3 sdb kacang tanah tumbuk untuk tabur atas
5-8 calamansi  / 5-8 limau kasturi
for the spice paste;
3 garlic cloves/ 3 ulas bawang putih
7 shallots / 7 biji bawang merah
15 dried chilies / 15 biji cili kering
1 small sweet potatoes cooked and mashed / 1 biji keledek direbus dan lecek
1/2 cup water / 1/2 cawan air
salts and sugar to taste / garam dan gula secukup rasa
2 tbsp cooking oil / 2 sdb minyak masak



Blend all ingredients except potatoes to form  wet paste. / Blend semua bahan sehingga halus.

Heat up pan and saute wet paste till fragrant. Add 1/2 water and mashed sweet potatoes. Add salts and sugar. Set aside. / Panaskan minyak dantumiskan bahan blend tadi. sehingga garing. Masukkan air dan keledek. Adjust rasa dan letak sebelah

Cook's Note :
You can use the same paste for your "passembor" or "Mamak rojak" just adjust the consistency/ Boleh digunakan resipi yang sama untuk kuah passembor atau rojak mamak.

for the seasoning
2 tbsp light soy sauce / 2 sdb kicap cair
1 tbsp dark soy sauce / 1 sdb kicap pekat
1 tbsp vinegar / 1 sdb cuka
Method:


Heat wok or large skillet or wok at medium high heat with oil .When skillet or wok hot enough,add in the wet paste for 2 minutes. shrimps until shrimps are done./ Panaskan minyak dan tumis bahan blend selamat 2 minit. Masukkan udang dan masak sehingga udang masak.

Increase heat to high ,then add in the noodles, green mustard, bean sprouts, fritters, potatoes and tofu. / Kuatkan api dan masukkan mee, sawi, taugeh, cucur udang,tofu dan kentang rebus.

Add seasoning.Mix all ingredients well. Check seasoning to your taste. / Masukkan bahan perasa dan adjust rasa. Gaul rata.

Garnish with fried shallot and serve warm. / Sedia dihidang bersama bawang goreng, kacang tanah, telur rebus, daun bawang dan limau kasturi.


 Cook's Note

You can opt to break in the eggs while frying the noodles or serve the eggs separately. I prefer mine separately. The actual mee mamak add the eggs together with the fried noodles./ Mengikut citarasa masing-masing, telur boleh dipecahkan semasa menggoreng mee atau diletak secara berasingan. Saya lebih gemar untuk meletakkantelur secara berasingan

MeeGoreng Mamak yang paling ummphhh....yang pernah saya rasai ialah di Bangkok Lane dan Padang Kota Lama Penang. Setakat ini tiada yang boleh tandingi mee goreng sana. Cukup sedap,,,pedas dan memang syok...lagi sedap bila ditambah dengan sambal sotong kering.


Saya kalau hendak menggoreng Mee Goreng Mamak ini saya suka yang lengkap..lengkap dengan cucur udangnya, kentang rebus, sambal sotong dan yang paling penting sambal untuk menumisnya. Kalau semua ini cukup barulah kita boleh menikmati Mee Goreng Mamak yang ori.

Mee pata tu mmg syiokkan kak (padang kota),my frnd sampai nanges tunggu mee tak sampai2 hehehhe time lunch mmg berchenta nak makan mee tu

Salam Nurwin.. thanks..itu akak replicate cara mamak. Kalau tenguk mamak goreng dia orang campak mee, sawi, taugeh dulu pas tu dia curahkan kuah dan goreng. Kuah tu yang penting dan kuah tu juga boleh kita guna buat rojak dan passembor mamak. That's the trick, jangan lupa letak cucur udang dan kentang rebus..itu yang bezakan mee goreng mamak dengan mee lain.
