CHICKEN IN TOMATO SAUCE


Quick and easy chicken recipe. A winner with kids and adults. You can adjust the use of dried chili. Perfect with rice or even pasta. To add color you can add some fried potatoes and some green peas. Tasty and satisfying dish.


Ingredients:

  • 1 whole chicken cut into 12 pieces / 1 ekor ayam dipotong 12
  • 5 tomatoes (about 300 gm), cut into cubes / 5 biji tomato segar dipotong kube
  • 1 onion cut into ring / 1 biji bawang  besar dipotong bulat
  • 2 Tbsp tomato ketchup / 2 sdb tomato sos
  • 1 bay leaf / 1 daun salam
  • 1/2 cup water / 1/2 cawan air
  • a dash of salt and sugar / garam dan gula secukup rasa
Marinade:
  • 2 tsp turmeric powder / 2 sdt serbut kunyit
  • 1 tsp salts / 1 sdt garam

Chili Paste
  • 25 dried chili / 25 batang cili kering
  • 5 cloves garlic / 5 ulas bawang putih
  • 9 shallots / 9 ulas awang merah

Blend all ingredients into wet paste and set aside / Blend semua bahan dan letak sebelah

PREPARATIONS
  1. Rinse chicken and drain well. Ru with turmeric powder and salts. Deep fry till golden brown. Drain and set aside. / Bersihkan ayam, lumur dengan garam kunyit. Goreng dan letak sebelah.
  2. Heat 2 tablespoons of oil in a hot wok (or saucepan).Add chili paste and fry till fragrant. Add tomato, tomato sauce, fresh tomatoes, ay leaf, sugar and salts. Add water.Simmer until thicken. / Panaskan minyak dan tumis bahan giling sehingga naik baunya. Masukkan sos tomato, tomato segar, daun salam, garam dan gula secukup rasa. Masukkan air dan reneh sehingga agak pekat
  3. Add the fried chicken and slice onion/ Masukkan ayam dan bawang besaryang dihiris bulat.

Ayam dalam sos tomato ini lebih kurang macam ayam masak merah atau ayam ros, bezanya ramuanuntukayam ini agak ringkas dan lebih kepada ramuan bolognaise cuma saya tamahkan cili untuk sesuaikan dengan tekak. Boleh juga tambah kentang goreng atau pun kacang peas hijau. Sesuai dengan nasi mahupun pasta
