PAN ROASTED CHICKEN BREAST WITH PAN SPEEDY SAUCE


A simple and tasty Chicken breast recipe inspired by Chef Micheal Smith of Chef At Home. Truly easy and, you'll want to make this again and again! I served this with rice and steamed broccoli. Really great your children will definite love. Add more spring onion it gave more impact on the dish.

INGREDIENTS
2 tbsp butter / 2 sdb mentega
2 sdb olive oil / 2 sdb minyak zaiton
salts and pepper / garam dan lada
2 chicken breast / 2 ketul dada ayam
2 green onon chopped / 2 tangkai daun awang dihiris halus

Speedy Pan Sauce
1 small onion, peeled and minced / 1 bawang besar dicincang
1 garlic clove, peeled and minced / 1 bawang putih dicincang
1/2 cup chicken stock / 1/2 cawan stok ayam
1/2 cup orange juice / 1/2 cawan juice orange

  • Heat up medium size skillet over medium high heat / Panaskan pan pada api yang sederhana besar.
  • When the pan is hot, add butter and oil and when it sizzles, season chicken breasts with salt and pepper and add to the pan, skin side down./ Masukkan mentega dan minyak zaiton, bila sudah mengelegak,lumurkan ayam dengan lada dan garam. Masukkan ke dalam pan yang panas tadi
  • Sear until they are well browned, about 10 minutes and then turn them and finish cooking for about 8 minutes. / Balik-balikkan sehingga kekuningan dan masak
  • When they are done, remove to a plate and reserve./ Bila sudah masak angkat dan letakkan ke dalam pinggan

Speedy Pan Sauce
  • Add onion and garlic to the hot pan, and sauté for a few minutes, until they are softened and begin to caramelize./ Masukkan bawang putih pada baki minyak goreng ayam tadi dan tumis beberapa minute.
  • Add chicken stock and reduce it by half. / Masukkan stok ayam dan reneh sehingga kuah tingga setengah.
  • Add orange juice and continue to reduce until the sauce has a syrup-like consistency. / Masukkan jus orange dan masaka sehingga pekat
  • Slice chicken breasts on the bias, and arrange on a small serving platter. Pour the sauce over them and serve. / Hiriskan ayam dan letakkan di atas pinggan. Curahkan sos dan taburkan dengan daun bawang


Side Dish
Blanch some broccoli and carrot

Menu ringkas dan menyelerakan. Pasti akan menjadi favourite anak-anak. Mudah memuatnya. Resipi diambil dari Chef Micheal Smith dari program Chef at Home. Biasalah masakan Mat Saleh ni selalunya diletakkan wine, tapi saya gantikan wine dengan stok ayam..lagi sedap dan manis. Hidangkan bersama nasi panas. Untuk sayur sebagai side dish, itu bergantung kepada pilihan masing-masing. Gunakan apa aje yang ada dalam fridge. Di sini saya guna brokoli dan lobak merah.
