LEPAT LIAT

 

This local delicacy is popular among the oldies. It's hard to get it these days. I used to buy this kuih in Farmer's Market, Sungai Petani, Kedah. Now staying in Ipoh I hardly find one. Recent visit to Sofea Blog - Afte6am blogspot, it intrigue me to try to make it myself. The kuih is a bit chewy.. and I believed that's how it got it's name. Liat literally means chewy or elastic. Wrap in banana leaves this kuih has fresh grated coconut as the fillings. Definitely my choice of kuih for Tea. Love it!!!

INGREDIENTS

500 g glutinous rice flour / 500 g tepung pulut
3-4 palm sugar / 3-4 ketul gula kabung
5 cups coconut milk / 5 cawan santan
1/2 coconut grated / 1/2 biji kelapa parut
5 tbsp cocoking oil / 5 sdb minyak masak
sufficient banana leaves for wrapping / daun pisang secukupnya untuk mengukus

Cook the coconut milk with sugar till thickens / Masak santan dan gula kabung sehingga pekat

Pour the syrup in the flour and knead till soft / Masukkan air gula tadi ke dalam tepung sedikit demi sedikit kacau rata dan kemudian uli.

Divide into small portion, flatten and fill the grated coconut. Grease the banana leaf with some oil and place the dough. Wrap as you make "lepat pisang" or banana parcel kuih. / Bahagi kepada beberapa bahagian, dan letakan inti kelapa. Oles daun pisang dengan sedikit minyak, letakan kuih dan bungus seperti membuat lepat pisang.

Steam for 15 - 20 minutes and serve hot / Kukus selama 15-20 minit dan sedia dihidang.

Semasa tinggal di Sungai Petani, inilah kuih yang wajib saya beli jika memborong di Pasar Tani. Cukup suka sekali. Sekarang ini kuih ini susah hendak dapat. Baru-baru ini jalan-jalan ke blog Sofea - after6am blogspot tiba-tiba keinganan tu datang jadi saya terus cari gula kabung dan daun pisang, kata orang utara buat satu pelengat. Wah suka rasanya tertunai sudah hasrat di hati. Saya fikirkan anak-anak tidak suka..rupa...rupanya mendapat response yang baik dari dia orang.

salam paty..terliur tgk lepat liat ni pepagi..ssya suka mkn..tp malas tul nk wat..yg nk perhabiskan nnt saya sorang gak..dh lama ngidam nk mkn lepat ni...ngidam kosong je...hehehe
