LAPIS SURABAYA AKA SPEKOEK

This cake is unique. This is one of Indonesia’s signature cakes. It was called Lapis Surabaya by people outside Surabaya but for the people in Surabaya this cake is called Spekoek.

It is a three layer sponge cake with chocolate layer sandwiched with vanilla flavor.  In Indonesia whether it’s a birthday or wedding, they always have this cake.I'm attracted to this cake during my company product launching in Surabaya way back in 2005.

I have been trying to make this cake for ages but quite worried that it wont turn out best. I heard many had attempted to make this cake but if you are unfortunate it may disappoint you. This cake used a lot of eggs and I believe that many would be contemplating to try if  it dosen't work. There are quite a lot of things that can go wrong when making the cake. This is my third attempt and I am happy that I finally got the right texture for this cake.



Anyway if you want a try , there are two version of this cake, the original version and the economical version.  One that need lots and lots of egg yolk and the other one is the economic version, which uses less egg yolk.  

The cake taste like a sponge cake, smooth and light.

Yellow Layers:
20 egg yolks
200 g caster sugar
2 tsps vanilla essence
1 tsp egg stabiliser-Ovalett
100 g plain flour
250 g melted butter
10 egg yolks
125 g caster sugar
1/2 tsp vanilla essence
1tp egg stabiliser-Ovalete
1/4 tsp salt
30 g plain flour
25 g cocoa powder (best quality)
125 g melted butter
4 tsps Strawberry jam or condensed milk

PREPARATIONS
1.Grease and line 3 baking tins 22x22x4.
2.Pre heat oven to 180C/Gas Mark 4
3.Prepare the yellow cake mix :beat together sugar,egg yolks,and vanilla until pale and thick.Add the stabiliser and beat again thoroughly for 5 minutes.Carefully pour in the butter and fold in thoroughly.Sift in the flour and fold in thoroughly.
4.Pour the mix into the cake tins and bake for about 15 minutes until springy to the touch.
5.Place cake tin on a wire rack and leave to cool for 10 minutes.
6.Carefully remove cake from tin and place on rack to cool completely.
7.Prepare the choclate layer in the same way as the yellow layer,except the cocoa powder should be sifted together with the flour.
8.To assemble the cake place one yellow layer on a large tray covered with baking paper.
9.Spread the top of the cake with a little strawberry jam or condensed milk,this is to stick the layers together 
10.Place the chocolate layer on top.Spread with jam or milk.
11.Place yellow layer on top,now the cake is ready.
12.It is a good idea to leave this cake for 24 hours before eating so the flavours can develop.

THE ECONOMIC VERSION - adapted from Macake
 Yellow layers : (You need two of this recipe to make 2 yellow layers)
  • 5 egg yolk
  • 3 egg white
  • 75 g caster sugar
  • 35 g plain flour
  • 15 g milk powder
  • 100 g melted butter
  • 1 tsp emulsifier* (Please see note)
Chocolate layer :
  • 5 egg yolk
  • 3 egg white
  • 75 g caster sugar
  • 25 g plain flour
  • 15 g cocoa powder
  • ¼ tsp chocolate paste
  • 10 g milk powder
  • 100 g melted butter
  • 1 tsp emulsifier* (Please see note)
  • Grease and line 3 of 8 inch baking tins
Pre heat oven to 175C (fan forced)

Prepare the yellow cake mix : Beat the egg whites to until stiff peaks form and set aside. Beat together sugar, egg yolks, sifted flour, milk powder and emulsifier until pale and thick. The cake mix will expand to around three times the original volume.  Put the melted butter into the cake mix and fold in thoroughly. Finally fold in the egg whites.

Pour the mix into the cake tins and bake for about 10 – 15 minutes until springy to the touch.

Place cake tin on a wire rack and leave to cool for 10 minutes.

Carefully remove cake from tin and place on rack to cool completely.

Prepare the chocolate layer in the same way as the yellow layer except beat the sifted cocoa powder together with the other ingredients.   Put the melted butter and chocolate paste into the cake mix and fold in thoroughly. 

Finally fold in the egg whites.

To assemble the cake place one yellow layer on a cake board and spread the top of the cake with thin layer of strawberry jam to stick the layers together.  You can put as much or as little jam you like.

Place the chocolate layer on top.  Spread with jam

Place yellow layer on top

Saya telah berkali-kali cuba membuat N3 selepas kembali dari cuti, nampaknya tidak berkesempatan, teramat sibuk terkejar sana terkejar sini, letih dibuatnya. Hari ini barulah ada kelapangan sedikit sebab sebelah petang nanti saya ada urusan di luar so selit-selitkan masa untuk selesaikan N3 ni. Dah banyak hari tergantung begitu aje.

Lapis Surabaya ini adalah kek span yang cukup terkenal di sana, tapi awasnya jika anda ke Surabaya dan bertanyakan kuih ini anda pasti akan mendapat jawapan yang negatif, kebanyakan penduduk di sana tidak mengenali kek ini sebagai Lapis Surabaya tetapi jika anda menyebutnya sebagai Spekoek pasti mereka akan tunjukkan kek ini kepada anda. Nama Lapis Surabaya cuma dikenali diluar Surabaya aje, mungkin senang untuk membezakan antara banyak kek lapis dari Indonesia ni.

Resipi asal kek ini banyak menggunakan telur, tetapi jika ingin mencuba, anda boleh menggunakan versi ekonomi. Meragam membuatnya juga boleh tahan, kadang-kadang boleh jadi bentat juga. Ini cubaan ketiga saya baru berhasil dan puas hati dengan tekturnya.

Saya sertakan di sini dua versi kalau yang berminat hendak mencuba. Sesuai jugalah kalau hendak sediakan untuk Syawal nanti.
