COCONUT CANDY


I always love this coconut candy. Today we hardly find one. I used to get a store bought coconut candy at Gurney Plaza Penang. Now that I am far...far away from Penang and if I had a sudden urge to have this candy I will make one.

This candy is popular during my school days and always a top sale item every time we had our Canteen Day.

I remembered learning to make this candy in my home science class. It's heavenly sweet, creamy and awesome!!!!
INGREDIENTS -

    • 2 1/2 freshly grated coconut (only the white part)
    • 2 cups castor sugar
    • 175ml evaporated milk
    • 1/2 cup condensed milk
    • 3/4 tbsp butter
    • 1/2 tsp salt
    • 1 tsp vanilla essence
    • One egg white, lightly beaten

Method

    Combine grated coconut, castor sugar, evaporated milk, condensed milk, butter and salt in a non-stick saucepan. Cook, stirring continuously over a low heat, until mixture starts to bubble. Add vanilla essence and egg white and keep on stirring until mixture turns quite dry and does not stick to the sides of the saucepan. Turn out mixture onto greased cookie trays. Level the mixture by pressing down with a flat spatula. Set aside to cool. When the coconut candy has hardened slightly, cut into small cubes with a lightly greased knife. Store in an airtight container.

    Suatu ketika dahulu candy ini cukup top di sekolah-sekolah, Saya masih ingat setiap kali ada Hari Kantin, candy inilah yang paling laris. Saya memang amat mengemari candy ini dan tempat favorite saya ialah di Gurney Plaza Penang, sedap candy di sana, kini dah jauh dari Penang kena la buat sendiri, tetapi sekarang ini tidaklah sekerap dahulu makan, kerana perlu kawalan, Baru-baru ini saya buat candy ini untuk birthday kawan anak saya. Saya warnakanya merah dan hijau bersesuaian dengan tema majlis. Intik membuatnya kelapa parit mestilah yang putih kalau boleh dibuang kulit arinya barulah candy akan lebih cantik apabila diwarnakan.
    Cukup sesuai untuk majlis hari jadi.
