This muffin recipe uses poppy seeds, coriander powder and lemon as its main ingredients. I omitted the coriander and substitute it with cinnamon. I feel quite unusual to use coriander. The finished muffins have a nice lemony flavor and a little bit of crunch from the poppy seeds. It's crunchy outside and moist inside. Not too sweet, so if you want to infuse a little bit of extra sweetness, give all of the mini muffins a generous sprinkle of coarse sugar on top before you bake them.
Lemon Poppyseed Mini Muffins - Heavily adapted from bakingbites.com
2 cups all purpose flour/ 2 cawan tepung serbaguna
1 tsp ground coriander / 1 sdt serbuk ketumbar
1/2 tsp baking soda / 1/2 sdt soda
1/4 tsp salt / 1/4 sdt garam
3/4 cup butter, room temperature / 3/4 cawan mentega
1 cup sugar / 1 cawan gula
1 tbsp lemon zest / 1 sdb kulit lemon
2 large eggs / 2 biji telur
1/2 tsp vanilla extract / 1/2 sdt vanilla
2 tbsp poppyseeds / 2 sdb biji poppy
PREPARATIONS
- Preheat oven to 350F. Line 36 mini muffin cups with paper liners./ Panaskan ketuhar dan alas kertas muffin dalam acuan muffins
- In a medium bowl, whisk together flour, coriander, baking soda and salt. / Satukan bahan-bahan kering dalam satu bekas.
- In a large bowl, cream together butter, sugar and lemon zest until light and fluffy. Beat in eggs one at a time, followed by vanilla. / Pukul mentega dengan gula sehingga ringan dan gebu. Masukkan kulit lemon. Masukkan telur telur sebiji demi sebiji diikuti dengan vanilla.
- Beat in flour mixture and poppyseeds on low speed. Batter will be fairly thick./Masukkan tepung dan biji poppy, pukul pada kadar rendah.
- Divide batter evenly into prepared mini muffin cups. / Bahagi sama rata dan sendukkan ke dalam acuan muffins
- Bake for 11-14 minutes, until a toothpick inserted into the center of a muffin comes out clean./ Bakar 11 - 14 minutes atau sehingga masak.

Entah kenapa, saya suka sangat dengan muffin ini, mungkin kerana ia kurang manis bersesuaian dengan saya yang diabetic. Menarik tentang muffin ini ialah di luarnya agak berkerak sedikit manakala di dalamnya lembut dan boleh dirasa keranggupan biji poppy. Bagi yang sukakan lebih manis bolih lah ditaburkan gula semasa makan ataupun disapukan jam dan butter. Untuk resipi ini bagi acuan mini boleh menghasilkan 36 biji muffins. Resipi asal menggunakan serbuk ketumbar tapi saya rasa agak luar biasa menggunakan serbuk ketumbar dalam resipi manis, saya gantikanya dengan serbuk kayu manis. Anda boleh tinggalkan bahagian ini kalau rasa ia tidak sesuai.
