Like what I said earlier life is incomplete without curry. Whether is beef chicken , fish or squi, it is a must have menu at home. When come to curry I preferred the Malaysian way a combination of Indian and Malay, not too thick and not too spicy. This basic recipe uses a Made in Malaysia Fish Curry Powder.
1¼ tsp halba campur / feneugreek
2 stalks curry leaves
clean and keep aside.
4 cloves garlic
3 packets fish curry powder - I used BABA'S
Blend and form into wet paste. Put aside
Other Ingredients
2½ tbsp tamarind (asam jawa), mixed with 1/2 cup water and squeezed for juice
1 ladle oil
1 cup thick coconut milk
2 cups thin coconut milk2 onions, quartered
There are many options of powder spicies but I preferred BABA, wonderful color and balance mixed of spices.It has just the right blend of spices for an authentic 'Malaysian-tasting' fish curry!
Some ingredients vary - My favorite choices are okra, eggplants and mango. Mango is fantastic it made your curry sourish.....

PREPARATIONS
- Season fish head with salt and set aside; just before cooking rinse off the salt.
- Heat oil in an earthen pot and fry mustard seeds until they start to pop. Add the rest of the spices and fry until fragrant.
- Add ground ingredients and stir-fry well until aromatic; add a little tamarind juice to prevent the ingredients from sticking to the pot.
- Stir in the rest of the tamarind juice followed by thin coconut milk. When it begins to boil, add the eggplants and bring to a simmer for four to five minutes.
- Put in the fish, onions, tomatoes, mangoes and lady's fingers.
- When the fish is almost cooked, pour in the thick coconut milk and add seasoning to taste.
- Bring to a boil and immediately turn off heat.
Cook's Note - I used 3 packet of Baba's curry powder to get right consistency and color.
