INGREDIENTS
20 tapioca shoots / 20 helai daun pucuk ubi - Hiris halus
10 kemangi leaves/ 10 helai daun kemangi - hiris halus
1 bunch kaduk leaves / secekak daun kaduk - hiris halus
3 salted fish cut into bite sizes / 3 ekor ikan asin dipotong kecil - saya guna cencaru masin
2 fresh tomato quartered / 2 biji tomato dibelah empat
1cup coconut milk / 1 cawan santan
3 tbsp tamarind juice/ 3 sdb air asam jawa
1/2 cup kerisik / 1/2 cawan kerisik
salts to taste / garam secukup rasa
1 tsp sugar / 1 sdt gula
sufficient banana leeaves for wrapping / daun pisng secukupnya untuk membungkus
Pounded/Blennded Ingredients
30 dried chilies / 30 tangkai cili kering
10 tbsp coriander / 10 sdb ketumbar
2 tbsp cumin / 2 sdb jintan manis
3 tbsp fennel / 3 sdb jintan putih
1/2 tbsp white peppercorn / 1/2 sdb lada sulah
5 lemongrass / 5 batang serai
2" galangal / 2 lengkuas
2" ginger / 2' halia
2" turmeric root / 2" kunyit hidup
2" shrimp paste / 2" belacan
9 shallots /9 biji bawang merah
5 cloves garlic/ 5 ulas bawang putih
Blend all into wet paste and set aside / Blend semua sehingga menjadi pes basah dan letak sebelah.
PREPARATIONS
In a large bowl mix all ingredients, the wet paste, the herbs leaves that had been sliced thinly, kerisik, coconut milk, salts, sugar, and tamarind juice. Mix well and divide into a few portion. Add salted fish in each portion, Wrapped with banana leaves and steam for 2 hours. / Masukkan semua bahan dalam satu bekas. Bahagikan kepada beberapa bahagian dan setiap bahagian diletakkan keratan ikan asin, Bungkus dalam daun pisang dan kukus selama 2 jam. Botok-botok ini lebih lama dikukus lebih sedap.
