CHOP SUEY - VEGETABLE DISH THE FILIPINO WAY

Chopsuey is a very popular and classic Chinese dish that has been adopted by Filipino cuisine, chop suey is a stir fried vegetable dish cooked with meat, carrots, snow peas, baby corn and quail eggs.


Other vegetables that may be included in chop suey are cauliflower, celery, cabbage, bamboo shoots, broccoli and mushrooms. In other words chop suey is a variation of stir fried mixed vegetables. - In Chinese chop suey means (mixed pieces) so to us in here in Malaysia we are more comfortable to refer this dish as mixed vegetables or chap cai. I used chicken fillet, shrimps and chicken liver from the chicken that I used for my Raya chicken rendang, So here's how I made my chop suey.


200 g shrimps, shelled, deveined and halved/ 200 g udang sedang kopek
2 chicken liver quartered / 2 keping hati dan empedal ayam 
100 g cauliflower, broken to bite size / 100 g bunga kobis potong ikut bunga
1 handful french beans/ 1 cekak kacang buncis
1/4 kilo cabbage, cut into squares / 1/4 kg kobis
8 pieces baby corns / 8 batang jagung muda 
5 cloves garlic,/ 5 ulas bawang putih cincang
1 carrot, sliced thinly/ 1 batang carrot potong nipis
2 tablespoons of cornstarch, dissolved in 1/4 cup of water/ 2 sdb tepung jagung bancuh dengan 1/4 cawan air
2 cups chicken stock (broth) / 2 cawan stok ayam
3 tablespoons of sesame oil / 3 sdb minyak bijan 
3 tablespoons of patis (fish sauce) / 3 sdb sos ikan
4 tablespoons of corn oil or vegetable oil

PREPARATIONS
  1.  In a big pan or wok, sauté garlic,  then add in the chicken, and chicken liver
  2.  Add 1 cup of stock, pinch of salt and simmer for 15 minutes or until chicken, and liver  are done
  3. Mix in the shrimp then all the vegetables. Add the remaining 1 cup of stock, patis and the dissolved cornstarch. Cook for about 10 minutes or until the vegetables are done. Add the sesame oil
  4. Add or sprinkle some salt and pepper to taste.

Chop Suey adalah masakan Cina yang popular di Filipino, malah bila sebut aje chop suey ramai yang akan menganggapnya sebagai makana orang Filipina. Chop Suey ini adalah seperti sayur campur goreng yang banyak menggunakan sayuran dan daging, tidak kira apa daging sekali pun. Dimasak secara tumis dan banyak menggunakan minyak bijan dan memekatkanya dengan tepung jagung.

Kerana hendak menyelamatkan hati ayam lebihan dari buat bihun soup ayam baru ini saya gorenglah chop suey sepinggan. Saya memang suka ratah aje. Saya gunakan apa aje sayur yang ada. Dalam chop suey ini apa aje saya boleh digunakan biasanya pemilihan sayur bergantung pada warna warni sayur supaya ianya nampak lebih meriah. Untuk memaniskan masakan sos ikan dan air stok ayam diguna. Sedap makan panas-panas dengan nasi.
