TALAM PANDAN GULA MERAH



I've been M.I.A again ( Missing In Action), I guess almost a week...however this time is more towards my commitment I have a few outstation work that I have to handle and was back yesterday and saw this "talam pandan gula merah" stranded for almost a week. So let's finish up with recipe first before we move to my eldest daughter birthday party menu. 

This talam is a combination of "kuih kosui" for the bottom layer and "seri muka gula merah" for the top layer. One thing unique about the local kuih, once you understand the process and get the right ratio of liquid and dry ingredients then you can create anything....variations using all sorts of ingredients and it turned out fantastic.



Talam Pandan Gula Merah

Ingredients:


The bottom layer
¾ sugar dan cook with 2 cup of water set aside and allowto cool / 3/4 cawan gula putih masak dengan 2 cawan air hingga mendidih...ketepikan

In another pot / dalam periok berasingan campurkan;
½ cup flour / 1/2 cawan tepung gandum
½ cup rice flour / 1/2 cawan tepung beras
1 cup pandan juice/ air daun pandan (kisar 4 helai daun pandan dengan 1 cawan air)
Pinch of salts / secubit garam
1 tsp alkaline water / 1 sudu teh air kapur
A few drop pandan paste /sedikit pes pandan

Combine all ingredients with sugar syrup Sieve and cook over low heat until steaming. Pour into tray and steam for 20 minutes. /Gaul semua bahan rata...tuangkan air gula tadi dan kacau rata....letakkan atas api perlahan dan kacau hingga bancuhan mula nak likat (jangan pekat sangat)...kukus dalam bekas kaca atau acuan kecil selama 20 minit

For The Top Layer
1 cup palm sugar / 1 cawan gula merah
1 cup water / 1 cawan air

Boil sugar and water till sugar dissolved. Leave to cool / masak gula merah dengan air sehingga sula hancur dan biarkan sejuk.

2 eggs / 2 biji telur
1 cup flour / 1 cawan tepung
2 tbsp mung bean flour / 2 tsdb tepung hong kue.

Mix the palm sugar syrup with all the ingredients, sieve and put on the stove at low heat until steaming, pour over the first layer and steam for 20 minutes / Campurkan bahan gula merah dengan bahan diatas tadi. Gaul rata tapis dan masak di atas api kecil sehingga naik wap. Tuang ke atas lapisan pertama tadi dan kukus selama 20 minit. Sejukkan sebelum dipotong.

CARROT WALNUT LOAF

Here is my Carrot Walnut Loaf Recipe. The ingredients and the process is similar with banana bread or zucchini bread. The only difference is well the carrot. The texture is soft and dense. Easy to prepare and economical.


Carrot Walnut Loaf

Ingredients:


2 cups ggrated carrot / 2 cawan lobak merah parut
1 cup vegetable oil / 1 cawan minyak sayur
1/2 tsp salt /1/2 sdt garam
1 1/2 cups flour / 1 1/2 cawan tepung
2 tsp baking powder / 2 sdt baking powder
1/2 cup to 1 cup chopped walnuts / 1/2 - 1 cawan walnut
1 cup granulated sugar / 1 cawan gula pasir
2 tsps vanilla extract / 2 sdt vanilla
3 eggs / 3 biji telur

  • preheat oven to 350-375
  • beat together oil, egg yolks (reserve whites) sugar, and hot water
  • stir in grated carrot 
  • stir in walnuts and vanilla
  • stir in salt, baking powder
  • stir in flour, 1/2 cup at a time
  • beat egg whites
  • fold in egg whites
  • bake for 30-40 minutes, till toothpick comes out clean 



CARAMEL BREAD PUDDING

This easy to make pudding is a combination of two recipes, creme caramel and the traditionl bread butter pudding. The caramel is built in the pudding. Ingredients are combined and blended together to form a fine batter and baked together with the creme caramel. It's creamy, sweet and delectable. Perfect sweet ending for any meals. You have options to make this pudding...you can steam or bake it. The results are fantastic both ways.



Caremel Bread Pudding

Ingredients:

For the Caramel / Untuk Karamel
½ cup sugar sugar / ½ cawan gula
1 tsp  water / 1 sdt  air
Heat 1/2 cup of sugar with 1 tsp of water in a pan till it melts and turns golden brown. Pour this caramelised sugar into the pudding mould and swirl to coat the sides of the mould. Keep aside to cool./Panskan 1/2 cawan gula dan masukkan 1 sdt air. Cairkan gula dan jadikan karamel. Tuang gula hangus ini dalam loyang yang disapu dengan mentega. Sejukkan dan letak sebelah
For the Pudding / Untuk Pudding
4 white bread / 4 keping roti putih
3 eggs / 3 biji telur
1 cup warm water / 1 cawan air suam
1 cup evaporated milk / 1 cawan susu cair
1/2 cup condensed milk / 1/2 cawan susu pekat
3 tbsp melted butter / 3 sdb mentega cair
vanilla essence / esen vanilla (1sk)

Directions:


Soaked bread in warm water and evaporated milk for half an hour. Add in condensed milk and melt butter.
Slightly beat the eggs and add to combine.
Blend all ingredients and pour batter into the caramel.
Bake in a moderate oven (180 0 C) till set, about 45 minutes. Serve warm or cold.


ESPRESSO/ARIZONA CHOCOLATE CHIPS COOKIES


Ever since the hospitalization I began very lazy in updating my blog....goodness I'm still on Eyba's Birthday Party menu where tomorrow we will be preparing for my eldest birthday party. I'm pushing myself to complete Eyba's party first or I ended up with outstanding entry. It's always difficult to START but I have to. This chocolate chips recipe I found in Lemondrop blog but I just made a little twist by adding espresso...I love coffee so some flavour in it made the cookies wonders.

They also don't spread much in the oven, so they're on the thicker side, which is another must for me. All of the brown sugar in the recipe contributes to the chewiness, but it also gives these cookies great flavor. As for the espresso? It lends a bit of a speckled appearance to the cookies, and I could definitely smell it in the dough and even in the baked cookies.

Smell great and taste good........perfect for any occasions.


Espresso /Arizona Chocolate Chips Cookies   Print Save Recipe

Ingredients:


2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
1 cup butter, softened (1/2 pound)
1 cup granulated sugar
1 cup brown sugar
1 eggs
1 1/2 teaspoon instant coffee - I used Nescafe
2 cups oats 
2 cups shredded coconut
1 cup chopped pecans
1 cup chocolate chips  

Directions:


Place rack in center of oven and preheat to 350F.  In a medium bowl, whisk together flour, baking soda, baking powder,espresso and salt; set aside.

In the bowl of a stand mixer, cream together butter, sugars, eggs, and vanilla.  Add the reserved flour mixture; beat just until mixed.  Lastly, add the oatmeal, shredded coconut, pecans, and chocolate chips; beat just until the ingredients are incorporated.

Using a #50 cookie scoop (about the size of 1 tablespoon), portion dough onto parchment or silicone lined baking sheet (I was able to get 15 on each 1/2 sheet tray).  Bake at 350F for 12-15 minutes.  Cool and enjoy!

BUFFALO CHICKEN WINGS


This is interesting !!!!! when I told the children that I'm making "buffalo wings" for Eyba's birthday party...the first thing that came out from their mouth were....yeak!!!!!! we don't eat buffalo. Well..look's like the name of buffalo wings tend to mislead many and for those who are in the same boat with my children here's an explanation from Wikipedia :-

Buffalo winghot wing or wing is a chicken wing section (drumette or flat) that is traditionally deep-fried unbreaded and then coated in sauce. Classic Buffalo-style chicken wing sauce is composed of a vinegar-based cayenne pepper hot sauce and butter.[1] Buffalo wings are traditionally served with celery sticks and blue cheese dressing.
Buffalo wings were created in Buffalo, New York. The residents of Buffalo generally refer to them as "wings" or "chicken wings" rather than "Buffalo wings."[2]
It's chicken wings la....you either baked or deep fried. As for Asian we prefer deep frying.
Cayenne pepper hot sauce and melted butter or margarine are the basis of the sauce. Buffalo wing sauce can be made with a variable amount of heat/spiciness, with the names of these sauces generally corresponding to the level of heat, such as mild, medium, or hot. Typically, the wings are deep-fried (although they are sometimes grilled or baked). The wings are usually fried in oil until they reach close to a golden brown color. They are then drained where they can either be placed in a bowl with sauce or seasoned with salt and pepper. Following this, one covers the bowl tightly and shakes to coat the wings. As an alternative to waiting to coat the wings until after they are cooked, one can also put seasoning over the wings in a sealed bag and shake them until they are coated evenly. Afterwards, the wings are arranged on a baking sheet and baked until they are cooked thoroughly. Wings can then be served dry with sauce on the side. 

I used paprika and cajun for my chicken....it's delicious and yummy....try this you sure love it.



Buffalo Wings aka Spicy Chicken Wings

Ingredients:


For the wings:
2 cups canola oil
2 kg chicken wings
1 teaspoon salt
1 teaspoon freshly ground pepper
2 tablespoons butter
Hot Sauce (use whatever hot sauce you like, but Isued paprika and cajun used about 1 tsp each.
2 tbsp oyster sauce 1 tbsp hoisin sauce
For homemade Blue Cheese dressing:
1 cup mayonnaise
2 tablespoons finely chopped onion
1 tablespoon finely chopped garlic
1/3 cup chopped fresh parsley
1/2 cup sour cream
1 tablespoon fresh lemon juice
1 tablespoon white vinegar
1/4 cup blue cheese, crumbled
Salt & pepper, to taste

Directions:


The only real prep work is to preheat the oil in a deep skillet or deep-fat fryer if you own one. You want the oil to get to about 375 degrees F. While the oil is heating, chop off the tips of each chicken wing and throw them away. Then cut each wing in half at the joint. You will get a "drummette" and a "double-bone"

Season the bunch with salt and pepper. This is a good time to preheat the oven to 350 degrees F.

If you are going to make your own Blue Cheese dressing, chop the garlic, onion and parsley while you are waiting for the oil to heat up.


Fry the wings in the oil until they are golden. Be careful when working around hot oil. The splatter hurts. You will want to move them around while they are frying so not to stick to the pan. Don't try to fry them all at once. Do them in batches. They should take about 6 to 8 minutes for each batch to fry. Remove them to a plate covered with a couple of layers of paper towels to drain the oil. Then place them in a large bowl.

In a small saucepan, heat the butter over medium heat. Add the hot sauce, oyster and hoisin sauce. How much hot sauce you add depends on how hot you like your wings and the heat of the sauce. There is no way I can tell you how much to add. It is a personal preference. Always start with less and add more if it isn't hot enough.

For 2 tablespoons of butter, I would start with 2 tablespoons of hot sauce for mild and go from there. A 2 to 1 ration of hot sauce to butter is HOT, a 3 to 1 ratio is EXTREME in my opinion. But let your taste buds be the judge.

Add the sauce to the wings in the bowl and toss together with kitchen tongs. Here's where I differ from the original recipe. Remove the wings from the bowl with the tongs and place them on a baking pan. You can line the pan with foil to help with clean up. Just don't crowd the wings or they will steam rather than bake. Bake the wings for about 15 minutes.

How to make the Blue Cheese dressing:

In a small bowl, add all the ingredients together. Gently stir together until well mixed. At this point you can put cover and put the bowl in the refrigerator until the wings are ready. If you like to serve your wings with cold blue cheese dressing, make ahead of time and chill.

If you want to get fancy, spread the wings and celery out on a platter with the bowl of blue cheese dressing in the center.

CHECKERBOARD SANDWICH

Make a checkerboard pattern of eggs and tuna sandwiches by using both whole wheat and white breads--fun for kids of all ages! A simple idea to make your sandwiches more appealing for the kids.




 Ingredients

  • 1 piece White High-fibre Bread
  • 1 piece Wholemeal (or Rye) Bread
  • Fillings of your choice

Method

  1. Make a sandwich using a piece of white bread and a piece of wholegrain.
  2. Cut sandwich twice lengthways and twice horizontally, making nine even, square pieces.
  3. Turn every second piece over, creating a checkerboard effect.

Idea membuat sandwich yang boleh menarik kanak-kanak terutama di majlis ulangtahun. Roti putih dan roti whole meal disusun berselang seli seprti papan catur dan diatur cili benggala  hijau dan merah sebagai biji catur. Boleh guna sebarang inti kegemaran anda. Cukup menarik untuk majlis dan lebih menarik jika disusun di atas dulang besi.

EYBA'S EVENING BIRTHDAY PARTY

Embrace the most important year of the life and party away on the birthday. I guess that 's every girl wishes to celebrate their birthday party with group of friends. It made easy for Eyba and Myraz coz both are with me in Ipoh...so mom seem to be the party organizer.
When the birthday girl is a child of this century, the big day is about fun with friends. It's about having a blast with the girl and going ga...ga... with a simple and scrumptious meal. Classic cocktails, music and games round out the party for an unforgettable event. I just made it light and easy party!!!! a simple garden party. I got the food done and the rest I left it to the girls to organize.....they know better what they want. This party is strictly for GIRLS ONLY.....


I'm off  from the kitchen AND I just like to make the blog going ... I recap the happy moments of Eyba's BIRTHDAY with her friends and I do receive request to highlight some of the party recipes...so ...I'm doing it now  and some tips that I've researched in organizing party. The Birthday Party Menu


  • Fried White Noodles - Noodles with shrimps and vegetable...very light and mild for kids.
  • Checkerboard Sandwich - Using white and wholemeal bread with eggs and tuna fillings. I arranged the sandwich to resemble the checkerboard with the red and green capsicum  as the horse, the knight etc....it's cute and fun
  • Buffalo wings - I made it the Malaysian way..a bit hot and spicy with blue cheese dip. It's delicious as I marinated the chicken wings overnight...I grilled the chicken instead of baking it.
  • Home made chicken nuggets - the girls love this so much with chili sauce. I made an entry on this before but this time around I used breadcrumbs....more crunchy and great.
  • Espresso Chocolate Chips Cookies - perfect for munching...I knew the girls have lots to do....ha...ha..... the  girl's talks....so cookies were be perfect for girls stories.
  • Caramel bread Pudding - ha....ha...this was for dessert...I used the sandwiches bread edges for this pudding. A recipes combination of caramel and bread pudding...just a simple reinvention !!!!!!
  • Apam Polka Dot......I'm lost of ideas what to give for as a door gift so I made this cute apam.......well it look's great...at least the girl's mom at home have something!!!!!!
  • Strawberry Sponge Cake - the first Cake I made with my friend's  Sally,  helps and finally the highlight and popular cake
  • The rainbow cake - wow... surprisingly I received and overwhelming response on this not only in my blog but also on Eyba's facebook and twitter.....ha....ha....a nightmare cake turned glorious andhppening !!!! As for the  cocktail for the party - Ambra Asam Boi Drinks.

I have one party to organize next week...my eldest AYU's belated party....she turned 23 on 19th March and I haven't made anything for here not even a birthday cake.....there's a reason for that...she's struggling for her final paper and I'm on sick leave so we plan this weekend for a small celebration for Ayu....till then choa.....!!!!

Dapur saya masih belum berasap lagi...seminggu dua ini makan di luar aje.....mood hendak memasak pun belum datang lagi....makan pun simple...simple aje...banyak fast food dan bubur nasi.....tak apalah saya take a break dulu. dan takut nanti blog ini sepi...saya teruskan juga dengan menu-menu yang tertunggak  terutama dengan menu birthday party Eyba baru-baru ini. Saya ada juga menerima permintaan untuk resipi seperti buffalo wings dan checkerboard sandwich.Sebenarnya menu birthday Eyba ini tidak ada yang baru semuanya telah saya muatkan tetapi   tetapi untuk partynya saya olahkan sedikit sebab biasanya dalam party food presentation itu mustahak..ialah bagi menampakan ia lebih menyelerakan.
Biasanya untuk birthday anak-anak saya taklah buat besar-besaran biasanya limit kepada 10 orang kawan terdekat dan buat menu simple yang menjadi favourite anak-anak. Party biasanya lebih pada mereka dan berkumpul...berborak dan have fun sesama sendiri. Bagi saya it's fairla selepasa hard day work study......kalau study aje pun anak-anak pun bosan dan bagi anak perempuan saya lebih senang suka kalau dia orang celebrate kat umah aje....pasang meja susun cantik-cantik celebratelah kat compund....nak bercerita criti naik ke bilik...hati kita pun senang senua di depan mata.
Kini sudah tak ada resipi baru, saya, highlight ajelah birthday Eyba ni,  takut nanti blog berserawang pula tanpa N3....hujung minggu ini mungkin saya kena tunaikan birthday anak sulung saya yang tertungggak Ayu masuk 23 tahun 19 hb baru ini...saya tak buat apa pun sebab Ayu sedang menghadapi peperiksaan semesternya dan kebetulan saya kurang sihat. Hendak bagi sama rata dan adil untuk semua anak-anak kenalah saya qadarkan birthday Ayu ini hujung minggu ini. Insyallah Jumaat ni last paper dia so dapatlah kita raikan nanti.
Untuk resipi-resipi birthday Eyba ini follow saya dalam next N3 saya akan cuba  muatkan dan untuk tips2 menyediakan party untuk anak-anak saya dah linkkan webnya...bagus juga dia beri checklist supaya kita tak lupa.
